WIAW: Sorta kinda just desserts

Happy WIAW!!

Today is just gonna be a shorty post. as I type it is increasingly late on Tuesday night and I have procrastinated on hw to the point where if its not due tomorrow, its not getting done.  I need sleep and fast!!

At my house, we almost always have some form of dessert around! Between cravings and a love for sweet cooking, this comes as no suprise. Its a daily occurance. We typically keep them on the healthier side, but do indulge now and then! As evidenced by this week’s photos, the dessert monsters are in full force lately. I think we have at least 3 options in the fridge right now….

Moral of this WIAW: Life’s short, eat dessert first. And also for lunch/breakfast/dinner/snack. You know what? Just eat some dessert now kay? (bonus if it has hidden veggies, like most of mine do, and its a healthy habit then right?)

Post-run on Sunday I decided to refuel with, well, dessert. Chocolate-pumpkin avocado mousse and a pumpkin scone (twas a mix)

Okay you caught me, I do eat savory food (sometimes) and veggies. Like this (weekly) salad from Dos Coyotes! A rainbow of fresh, local veggies atop beans and corn tortillas plus cranberry salsa. The staff knows our order by heart. Oops 😉

And this one night when I got really ambitious and made a homecooked meal! We’ve been vegan almost 3 years and this is the first time we’ve made the stereotypical lentil loaf haha! I bumped it up by adding some good spices, quinoa, carrot, fennel, celery and mushrooms, and made 2 batches so 1 is in the freezer for our Thanksliving celebration! Also, mashed potatoes with chickpea gravy and veggies. Comfort food on rainy days at its finest!

And last but not least, Pumpkin Pie. My mom is trialing our Thanksliving spread, so we currently have an awesome pie in our fridge (love you so much mom!). Buuut I don’t have a pic, so you get the recipe for last year’s Un-Pumpkin pie!

Why do I keep calling it Thanksliving?

Because we are giving thanks for all life this holiday. On saturday we are going to Farm Sanctuary to celebrate the turkeys that lived and give them a feast of their own! So excited!

ALSO! My laptop died on me (whomp whomp) So I am transfered to my desktop for now, meaning my race recap is further pushed back die to photo storage (sorry). Sweet or Savory??

WIAW -Just dropping in!

Hey! Just popping in between homework assignments for a quick WIAW! I don’t have much time, and my eats have looked very similar day to day -as is the life of a high school AP student. I also didn’t even get pictures of a lot of my eats (aka my desserts, which are the best haha) Sad. But my hard class is almost over, fall is in the air, and its WIAW!!!!!

And can we all give a big virtual hug to mama Jenn for hosting? I just love her baby so much!!!!If I weren’t so talkative this would be a wordless WIAW, but instead its just completely random as I try to unscramble my brain from quizzes and tests 🙂

I’m resourceful. What do you do when your outlets stop working? Keep moving the blender around to every outlet in the house until your kabocha-gingerbread ice cream base is WELL BLENDED. 😉

For whatever reason I’ve been really into cereal for dessert lately. At breakfast I only want oatmeal, but at dessert time? bowls of cereal are bomb. This was veganic brown rice cacao crispies with almond milk:)

TCBY Launched their Almond Milk froyo so of course we had to go check it out! The verdict? Really sweet. I’m spoiled by the uber dark chocolate and less sweet desserts I make myself haha! But still, its super awesome to have an option other than sorbet now!!!

WIAWhen its that awkward between seasons time

Happy Humpday everybody!!!!

Sorry I’m a bit late to the party, but hey I made it! Yes, for the first time since school started, my week day workload is finally somewhat manageable, and I couldn’t wait to show you my pretty food pictures! Come on, tell me you don’t do that too.

Truth. Anyway, even though it is still, albeit barely, August, I’ve started to crave fall. Pumpkin, cinnamon, boots and cozy blankets and tea. Yes. Alas, its still summer. So my eats are a little mood-swingy haha!!photo-256See on the summer spectrum, I still love big green smoothies -this is a melon-pineapple-matcha-mint and ginger combo (plus lemon and spinach). So refreshing!photo 3-120But I’ve also been getting into oatmeal a lot more recently. Solution? Summer fruit oats! Topped with blueberries, grapes, kiwi and watermelon, because why not? Eeeeexactly.photo 5-77Still, this morning, all bets were off. Its fall enough for me!!! I know its still Summer, but have you started to “crave” Fall? Confession: Its gotten so bad that I had pumpkin/orange at every meal today. Pumpkin oats, sweet potatoes at lunch, kabocha at dinner, and pumpkin pie ice cream (home made, once I tweak the recipe I’ll post it!) for dessert!! Commence my lovely self-tanning habits of Autumn!

WIAW beginning of the end

Its the last few days of summer….But its also WEDNESDAY!!!!!

On a slightly unrelated note, am I the only one who, when writing Wednesday out, says weD-NES-day in my head?Un-Tangent. On with the eats!!!photo-222Since my breakfasts have still been mostly smoothie bowls, I didn’t take pictures of them. BUT I did take a picture when I DIDNT have a smoothie for breakie!!! Here we have oatmeal topped with grapes, apple and strawberries, all smothered in peanut butter sauce. Basically PB&J but with the whole fruits!! Grapes on oatmeal? Actually pretty good!!photo-224And once I got reeeeaaallllyyy fancy and made pancakes!!! Using Living Intentions sprouted super flour (review coming soon!) I made sweet cinnamon almond pancakes with peanut butter banana fluff and peaches -so good!! So I’ve lately kinda gotten into the habit of doing WIAW posts every-other-Wednesday (or less often), but then I have so many pictures that these things run kind of long. And I’ve been eating variations of similar things a lot, so its just kind of a lot of repeat pictures. I mean, lately its been smoothies, salads, and anything I can eat with my hands. And dessert. Like, all the time.

 

So what do I mean by that? Well lets start at breakfast…

Aaannndddd once in a while, oatmeal. But still topped, as though it is a smoothie bowl. Yes, this is carrot-ginger topped with green apple. I’m weird.

but on the days I didn’t have a smoothie for breakfast, I will usually have one in the afternoon. Lately I’ve been obsessed with a matcha-melon-mint combo with frozen cantaloupe, coconut water, a bit of banana, fresh mint, lemon, ginger, matcha powder, and spinach. mmmm…. so good! Plus it helps soothe my tummy whenever I OD on…

Oh oh! And I made more veggie burgers for my little sister’s B-day BBQ – my big sister and her boyfriend are doing the 21-day vegan kickstart so I decided to make sure there was food for us

I can’t believe another year has passed. Just yesterday I was writing this post for her, and now she is 5 years old and starting Kindergarten in a week!!! (she starts kindergarten the same year I start senior year -how cute is that!)

Sometimes I experiment and prove that you can make chocolate pudding out of just about anything. Like this clean-out-the-fridge version with avocado, leftover squash, leftover black beans, leftover shredded veggies, almond milk, cocoa powder, banana, and something sweet. and you know, vanilla, salt, xanthan gum etc etc. I must be magic or something because this was delicious haha!

And sometimes, I’m just thankful that cookies are kind of hard to mess up. Like when you heat the oven almost 100 degrees hotter than the recipe called for. Sweet potatoes may be cooked at 425, but cookies should be at 350…Thank goodness they were fine haha!!

On Fathers day I made a picnic for my dad and step siblings! I brought the fixins for sun butter and jelly sandwiches, grapes, carrot sticks, and freshly made chocolate chip cookies using this recipe. They were just slightly under baked and perfect 🙂

Please, please tell me you’ve tried dipping grapes in nut butter. Its delicious and tastes like straight up PB&J. Especially if its peanut butter and those really dark, sweet purple grapes. Heaven. Ignore the nasty napkin 😉

We had a vegan BBQ/Pot luck the other day! An assortment of spanish rice, quinoa salad, pasta salad, fruit and fresh veganic veggies, and a veggie dog. I think I am officially past the whole “transition foods” stage of veganism, because I didn’t really like the veggie dog. Any of that fake stuff-fake meat, fake cheese, etc just doesn’t appeal to me. I’d rather eat real food, thats not trying to be something its not. Superficial vegan food 😉

Very rarely does a container of figs actually make it home. Everytime we buy them, my mom and I go through the whole display to find the most ripe ones, make our own little basket full, and eat them all on the car ride home. Its like a tradition 😉 Also this fig was huge. I had to show you guys.

Have you ever heard of a Santa Clause Melon? Its like a cross between cantaloupe and honeydew, and it looks like a green football on the outside. Anyway, I found it at WF and its delicious. I had it on a salad with Braggs Braggberry dressing (blueberry, raspberry, acai, gogi, grape, and ACV. Totes recreating it)

Our weather was super weird a few days ago, and it went from 90’s to 60’s and raining in 2 days. Now its in the 90’s again and will be 106 on Monday. Ouch. Anyway, I just so happened to be sick on the rainy day, so I spent all day on the couch reading and ate a mug of split pea soup for lunch. If only I hadn’t been sick I would have been so cozy!

Later that afternoon I decided I didn’t like being sick. I now believe in the healing powers of rest and green smoothies. I made a huge smoothie with santa clause melon, lemon, ginger, celery, cucumber, parsley and power greens lettuce mix. I tell you what, this sick affected my whole family for 3-4 days, and I was only sick for one. All Hail the Smoothie!!!

Movie snack! Apple, puffins and almonds with warm vanilla milk (almond milk, stevia, and vanilla extract. A slightly healthier version of the vanilla milk I grew up making (read cows milk and spoonful upon heaping spoonful of sugar. Like sickly sweet. I know, great for a 5 year old before bedtime) and like better than hot cocoa!) I had this while watching Warm Bodies, which I highly recommend!!

And here we have baked japanese sweet potato topped with cheater baked beans and coconut bacon, plus a side salad. How to make cheater baked beans: We followed Happy Herbivore’s recipe but on stovetop, and using kidney beans plus corn. Since we weren’t actually going to bake them, we mashed the beans a bit and that thickened the whole dish up quite nicely! This was really really good!

Looking over some of my recent eats, I’ve come to the conclusion that allthetime sometimes I have some very, well, interesting eats. And sometimes its best not to question them.

Sometimes….

…you feel like making an actual meal (pasta and veggies with a dairy free cheese sauce, recipe up soon!!)

But sometimes…

…Its just frozen pizza night (new gluten and dairy free vegan pizza on the shelves, with a few extra veggies for good measure)

…but you’ll probably make a salad too. (spiralized carrots and candy cane beets with peach vinegar and honey mustard)

Sometimes…

…you eat a reasonable amount of squash. But more than likely you’ll go back for more and never learn your lesson (cough cough bloated cough cough don’t care)

…you are cleaning up from lunch and have a ‘hmm what would happen if…’ moment resulting in a little BLT* action that is so good you make it again and document it. Aka leftover apple slice + cucumber + coconut bacon is delicious. Even when you are full. This would be a good sandwich. *BLT-Bites, licks and tastes

WIAW summer (finally!) edition

Happy first WIAW of Summer Break!! Whoo!!! Let’s give a round of applause to the lovely Jenn who puts on this party!!

I’ve made it my goal this summer to try and have one smoothie or juice every day (or at least almost every day), and so I’ve been starting every morning out with a green smoothie! It’s nice to wake up my tummy and body with all those nutrients so easily available, and it has so far seemed to wake me up and prevented bloating through out the day (sorry, I get bloated easily…#addictedtowatermelon #andsquash 😉 )

The past few days I’ve had it with apple, celery, lemon, ginger, water or coconut water, spinach and ice, and today I exchanged the ice and apple for frozen watermelon and added some parsley 🙂

and stepping way outside my comfort some with a PBB(C)BJ. Hahaha! This was like, 3 fear foods at the same time :bread (more than 1 slice), a banana (one of the still wary fruits for me) and generally a PBJ. And what, pray tell, is the (C)B part??

Coconut Bacon!! Please, please, please go make this ‘bacon’. It is addicting and amazing and insanely like bacon, as in it has the crunch texture that tempeh does not. I never even liked real bacon before I was vegan (too greasy and often burned) but this, this was delicious. But follow the directions. I know someone who almost shunned the recipe because she used shredded coconut, hot sesame oil, too much liquid smoke, and then burned it. Yeah, don’t do that. Do it this way…

Oh and by the way, the sandwich was delicious 😉 (tangent: Like my blueberry smile? That was a fail at cutting a loaf of bread, I only got the crust haha)

Of course, I didn’t follow my routine when I made yesterday’s Cake Batter Milkshake for breakfast. Because it felt a little silly to have a smoothie followed by a smoothie ;).

Lunches have mostly been salads. Obviously! They are such a perfect canvas: This one had lentils, grapes, broccoli, pepper, BBQ world peas, and a creamy dressing out of ketchup and a home made vegan tofu mayo. Plus squash on the side. Why fix something if it ain’t broke?

Apple, cucumber, honey mustard, basalmic, and sea salt chickpeas that I won from Caitlin’s giveaway. They were kind enough to send me four flavors of chickpeas and one bar, since two of the three bars had dairy.

They came in the mail right as we were leaving for a shopping trip, so they came in perfect handy when it was snack time! I thought these ones tasted like spicy fruit loops. I think everything with lime in it tastes like fruit loops though haha!

These were my favorite of the savory ones! I haven’t tried the cinnamon ones, or the trail mix bar yet, but I am soon!! Thank you Caitlin, for my new addiction 😉

Of course, I have switched it up a bit for lunches too! We made breakfast for lunch one day, with banana cinnamon french toast made with fresh Health Starts Here bread from Whole Paycheck, topped with fresh fruit, and a tofu scramble with more coconut bacon on top:)

One thing I haven’t taken a picture of? The sheer MASS of fresh fruit I’ve been eating. Like, at least my weight in fruit. Cherries, melon, berries, apples, you name it:) Summer, you’re my favorite:)

How’s your summer been lately??

WIAW-just desserts (well, almost)

Happy Wednesday! If, in fact, you are reading this on Wednesday, and if it happens to be 12:05 pacific time, that means I am 24 hours away from SUMMER!!! yessss….

So this week I just so happened to take a lot of photos of dessert. It happens sometimes. I ate other stuff too, but you know, not as pretty 😉

My sister, myself, and my brother 🙂 (told you I was short)

First and fore mostly, I want to congratulate my big sister on her college graduation!! I love her so much, and I couldn’t be more proud of her! She already has a job with the state too!

I was all caught up in the celebration and didn’t snap a photo of the food at the party, but (with the exception of the chicken) it was all vegan and delicious!

Normal food! We ate dinner at a place called Lettuce, which was like a build your own salad (think subway or coldstone), and they also had soup and quinoa salad (pasta, dessert, sandwiches, fresh bread, etc too) It was amazing. I do strongly believe they should become a chain!

Matcha tea latte made with almond milk from whole foods -so frothy!! Can I please have a milk frother and fluff all the drinks? Please?

A yummy portabella burger (i have to check every time I spell that) on the bbq! We also had grilled cabbage with an avocado balsamic dressing. Super yum.

Aaannnddd because I wanted to prove to you my watermelon addiction. See this bowl? This is a very large bowl. It was filled to the brim-overfilled actually-with an entire watermelon on monday afternoon. This is what it looked like Tuesday afternoon. 24 hours allbymyself. *i don’t have a problem 😉

Hot Chocolate… well, its supposed to be raw, but I killed it and made it hot chocolate 😉

This is very different, but good! Its a not too sweet, creamy cacao drink with warming spices and excellent stats! If you are looking for a traditional cocoa, just add a touch more sweetness and its awesome, otherwise its a good drink to get that chocolate craving without triggering that ineedmorechocolate button (you know what I’m talking about-the sweeter and richer the chocolate, the more you want ;). Very, sophisticated, tasting.

WIA-since my last WIAW…

Woah how long has it been since I did a WIAW? Like a month? Gee whiz!

Well I have some photos of the better meals for you today, that I have randomly taken but never got around to posting! Then next week we can start all over with more recent times!

photo-104Okay breakfasts are still kinda the same…OIA-(Homemade cashew butter) J. We go through nut butter like its our job. We always have at least 3 different kinds, and OIAJ is a regular occurrence for me (I finally have my family trained to leave the jars at prime picking!!)

But when the jars aren’t empty, they are full of Caramel Macchiato Almond Butter 😉 Shameless plug.

WATERMELON!!! (while cleaning my room…that awkward moment when your mattress pad is a really good backdrop)

I may or may not have single handedly consumed 2 large and one personal watermelon in the past month. The most recent was a large melon in a record 4 days!

I made Laura’s Blood Orange Avocado scones and we had them for dessert as strawberry shortcake (with lemon soy yogurt). Yum.

Feelin Fancy with my Free Time! Roasted red peppers stuffed with a curried lentil-farro grain-green peas mixture and lemon pepper balsamic broccolini on the side. I’m getting good at this 😉

I made delicious comfort food too!! Not as pretty but just as yummy! Vegan Mac n Cheese (using this recipe) with peas and mushrooms. Because when I was little my mac always had peas in it. And sometimes hot dogs. Slash hamburger helper. mmm dinner in a box 😉

First bbq of the season!!! I made mexican tempeh-black bean-cauliflower burgers that my stepdad grilled along with sweet raspberry chipotle asparagus and corn on the cob (that I can eat sans braces whoop!!)

This was eaten during my stress month, can you tell? What better to put on chocolate pudding than chocolate brownies amiright?

And its only fitting for the final picture to be of the final slice…of this amazing Raw Carrot Cake. The saddest part is that I couldn’t edge off more cake even out the rest of it when I was done…Guess I know what Im making tomorrow 😉
