WIAW -Just dropping in!

Hey! Just popping in between homework assignments for a quick WIAW! I don’t have much time, and my eats have looked very similar day to day -as is the life of a high school AP student. I also didn’t even get pictures of a lot of my eats (aka my desserts, which are the best haha) Sad. But my hard class is almost over, fall is in the air, and its WIAW!!!!!

And can we all give a big virtual hug to mama Jenn for hosting? I just love her baby so much!!!!If I weren’t so talkative this would be a wordless WIAW, but instead its just completely random as I try to unscramble my brain from quizzes and tests 🙂

photo 4-88

I seriously cannot get enough squash lately. Kabocha for the win!!

photo-188

photo-162

I swear I am turning even more orange than I already am….totally okay with me.

photo-261photo-258

Throw everything on a salad and call it a meal. Fresh veggies, leftovers, etc and etc. I dig it. mmmmmm kale 😉

photo 1-124

Once in a while I actually have time to cook! Vegan mac n cheese with a cauliflower cheezy sauce, quinoa penne, and veggies

photo-262

Apple oatmeal…..

photo 2-127

Pumpkin oatmeal…

photo-260

Okay if you haven’t made the cookie crisp cereal from Purely Twins, go do so now. ADDICTIVE.

photo-263

Yes I tried cotton candy grapes. Yes they taste like cotton candy haha! Oh America…..

photo 3-123

I’m resourceful. What do you do when your outlets stop working? Keep moving the blender around to every outlet in the house until your kabocha-gingerbread ice cream base is WELL BLENDED. 😉
photo 2-128

For whatever reason I’ve been really into cereal for dessert lately. At breakfast I only want oatmeal, but at dessert time? bowls of cereal are bomb. This was veganic brown rice cacao crispies with almond milk:)
photo 2-129

TCBY Launched their Almond Milk froyo so of course we had to go check it out! The verdict? Really sweet. I’m spoiled by the uber dark chocolate and less sweet desserts I make myself haha! But still, its super awesome to have an option other than sorbet now!!!

Have you guys seen the new savory teas? We got the garden sampler so we could try all the different flavors. They are well, different. Interesting at least! Like a very weak broth.

photo-265

And last but not least, I’ve been practicing my smoothie skills because I GOT A JOB AT JAMBA JUICE!!!! Whoop whoop!!!

Don’t forget to check out my Vegan Delish review and enter the GIVEAWAY!! 😀

Aaaannnndddd thats all I have time for! Have a lovely lovely week everyone!!!

WIAW beginning of the end

Its the last few days of summer….But its also WEDNESDAY!!!!!

On a slightly unrelated note, am I the only one who, when writing Wednesday out, says weD-NES-day in my head?Un-Tangent. On with the eats!!!photo-222Since my breakfasts have still been mostly smoothie bowls, I didn’t take pictures of them. BUT I did take a picture when I DIDNT have a smoothie for breakie!!! Here we have oatmeal topped with grapes, apple and strawberries, all smothered in peanut butter sauce. Basically PB&J but with the whole fruits!! Grapes on oatmeal? Actually pretty good!!photo-224And once I got reeeeaaallllyyy fancy and made pancakes!!! Using Living Intentions sprouted super flour (review coming soon!) I made sweet cinnamon almond pancakes with peanut butter banana fluff and peaches -so good!! Why don’t I make creative (read not oatmeal or smoothies) breakfasts more often??photo-215Monster salads have always been making lunch appearances. Lettuce, all the veggies, a multitude of condiments, beans and world peas, and nutritional yeast 🙂 photo-217I decided to give Kevita another chance…nope still like Kombucha better.photo-227My latest smoothie obsession has been using frozen cantaloupe -so I got two just to freeze….insert inappropriate jokes about melons and balls here. Yes, I am in fact still a teenager. 😉photo-219A delicious vegan meal at Baagan that I shared with my momma the other day -massaged kale salad, mushroom quesadillas and a morrocan millet salad (MUST RECREATE)photo-225Oh wait, no, i can’t go one single WIAW without a smoothie bowl. But I actually didn’t have this for breakfast! This was a really super late dinner that I didn’t feel like cooking for, and it was like dessert and dinner at the same time (don’t let the color fool you, it was sweet and fruity and also our kitchen is yellow so the lighting is icky haha!)photo-220I blended up soy yogurt, bananas, and frozen berries then stuck it in the ice cream machine and BAM instant froyo!! So good, it tasted like Jamba Juice!photo-218Fruit has been absolutely gorgeous lately -I think its my favorite subject to photograph!photo-226Of course, cookies are always pretty too 😉 Oatmeal raisin cookies I baked for my mom’s class!!photo-223Cinnamon espresso ice cream that I made and yet have no recipe for because I was just creating! Sorry!!! But it was good!photo-221And lastly, my favorite food picture of the week.  Cherries. Gosh I love summer!!!photo-214And in other news!! I dropped my little sister off for her first day of kindergarten this morning!!! Ahhh she is getting so big!!! I don’t start school till monday, but I wanted a kindergarten/senior year photo so I wore my senior shirt (yes, I made it). I can’t believe that this day has come-time flies so quickly!!! Today is the last day to enter my Journey Bar giveaway!! I will pick a winner tonight so check back soon!!

Chocolate Cherry Matcha Shake

photo-181

So you may remember how I mentioned that we are in the middle of a heat wave.

I have hardly left the house for the past couple of days, instead we have been cleaning.

You can only take so much cleaning.

We (meaning my mother and I) needed an afternoon pick me up -something cold and energizing…

My mom wanted matcha. I wanted chocolate (I’ve been in an Eat ALL the chocolate!!! mood lately)

But would chocolate and green tea be good together????

We debated for a good 5 minutes -chocolate matcha or peach matcha? Chocolate or peach? Peach or chocolate?

photo 1-88

We went with chocolate.

photo 5-56

Life is rough.

Chocolate Cherry Matcha Shake

serves 2

  • 1/2 cup Dark Chocolate almond milk, frozen (about 6 ice cubes)*
  • 1 C. frozen dark sweet cherries
  • 1-1 1/2 C. non dairy milk
  • 1/2 tsp vanilla extract
  • 2 T. dark cocoa powder (or 3 T. regular)
  • 1 1/2 T. Matcha green tea powder
  • 1/4 – 1/2 tsp stevia, or other sweetener (to taste)

Blend everything up!! Thats it:)

*We have taken to keeping a stash of almond milk in ice cube trays in the freezer for creamier smoothies and the like:), and just so happened to have a bit of chocolate almond milk in the freezer. If you don’t have the chocolate almond milk, just add a bit more cocoa powder and sweet 🙂

photo 2-93

This was perfect! Cool, creamy, and refreshing, the dark, rich chocolate balanced perfectly with the grassy freshness of the matcha, plus a hint of fruity sweetness from the cherries!

A little bit of heaven in a glass

photo 4-83

Now off to tackle the dusting…

WIAW!!

AAHHH! Its my 100th post!!! this is cool! I have a recipe coming for you soon 🙂

In other news happy Wednesday!!

Lets get to the eats!

photo 2-84

Vanilla cinnamon oats topped with strawberries and almonds

photo 5-46

Tropical smoothie (froz mango, bloobs, tropical VEGA, spinach) topped with granola

photo-160

Mixed banana berry smoothie topped with strawberry raspberry granola. These are my new favorite thing after eating an acai bowl almost every stinkin day in Southern California

photo-156

Of course, I could never let a perfectly good OIAJ opportunity go to waste! Peach, apple, blueberry oats with (homemade) almond butter

photo-161

My family had a spring roll bar for lunch the other day! Carrots, beets, cucumber and local 5 spice tofu. I had more than this, don’t worry 🙂 It was just a pretty picture! And delicious in peanut sauce.

photo-162

Uhh, duh. Kabocha…What were you expecting? 😉

photo 3-74

On Fathers day I made a picnic for my dad and step siblings! I brought the fixins for sun butter and jelly sandwiches, grapes, carrot sticks, and freshly made chocolate chip cookies using this recipe. They were just slightly under baked and perfect 🙂

photo 5-47

Please, please tell me you’ve tried dipping grapes in nut butter. Its delicious and tastes like straight up PB&J. Especially if its peanut butter and those really dark, sweet purple grapes. Heaven. Ignore the nasty napkin 😉

photo 1-73

We had a vegan BBQ/Pot luck the other day! An assortment of spanish rice, quinoa salad, pasta salad, fruit and fresh veganic veggies, and a veggie dog. I think I am officially past the whole “transition foods” stage of veganism, because I didn’t really like the veggie dog. Any of that fake stuff-fake meat, fake cheese, etc just doesn’t appeal to me. I’d rather eat real food, thats not trying to be something its not. Superficial vegan food 😉

photo 2-76

Soy ice cream on the other hand, thats perfectly fine with me 🙂 Especially with brownies and peanut butter cookie dough bites!

photo-168

Very rarely does a container of figs actually make it home. Everytime we buy them, my mom and I go through the whole display to find the most ripe ones, make our own little basket full, and eat them all on the car ride home. Its like a tradition 😉 Also this fig was huge. I had to show you guys.

photo-169

Have you ever heard of a Santa Clause Melon? Its like a cross between cantaloupe and honeydew, and it looks like a green football on the outside. Anyway, I found it at WF and its delicious. I had it on a salad with Braggs Braggberry dressing (blueberry, raspberry, acai, gogi, grape, and ACV. Totes recreating it)

photo-165

Our weather was super weird a few days ago, and it went from 90’s to 60’s and raining in 2 days. Now its in the 90’s again and will be 106 on Monday. Ouch. Anyway, I just so happened to be sick on the rainy day, so I spent all day on the couch reading and ate a mug of split pea soup for lunch. If only I hadn’t been sick I would have been so cozy!

photo-164

Later that afternoon I decided I didn’t like being sick. I now believe in the healing powers of rest and green smoothies. I made a huge smoothie with santa clause melon, lemon, ginger, celery, cucumber, parsley and power greens lettuce mix. I tell you what, this sick affected my whole family for 3-4 days, and I was only sick for one. All Hail the Smoothie!!!

photo-163

Movie snack! Apple, puffins and almonds with warm vanilla milk (almond milk, stevia, and vanilla extract. A slightly healthier version of the vanilla milk I grew up making (read cows milk and spoonful upon heaping spoonful of sugar. Like sickly sweet. I know, great for a 5 year old before bedtime) and like better than hot cocoa!) I had this while watching Warm Bodies, which I highly recommend!!

photo-167

Island Portabella burgers with grilled pineapple and baked sweet potato fries on the side. This was delicious 🙂
photo-166

And here we have baked japanese sweet potato topped with cheater baked beans and coconut bacon, plus a side salad. How to make cheater baked beans: We followed Happy Herbivore’s recipe but on stovetop, and using kidney beans plus corn. Since we weren’t actually going to bake them, we mashed the beans a bit and that thickened the whole dish up quite nicely! This was really really good!

photo-170

And last but not least, a bit of a sneak peak of that recipe I will be sharing shortly!! Doesn’t it look good???

Hehehe:)

Had any weird weather lately?

Whats your latest breakfast obsession?

WIAW summer (finally!) edition

Happy first WIAW of Summer Break!! Whoo!!! Let’s give a round of applause to the lovely Jenn who puts on this party!!

I’ve made it my goal this summer to try and have one smoothie or juice every day (or at least almost every day), and so I’ve been starting every morning out with a green smoothie! It’s nice to wake up my tummy and body with all those nutrients so easily available, and it has so far seemed to wake me up and prevented bloating through out the day (sorry, I get bloated easily…#addictedtowatermelon #andsquash 😉 )

photo-140

The past few days I’ve had it with apple, celery, lemon, ginger, water or coconut water, spinach and ice, and today I exchanged the ice and apple for frozen watermelon and added some parsley 🙂

photo-131

After my smoothie its time for breakfast!!! oats with blueberries and peanut butter…

photo-143

and stepping way outside my comfort some with a PBB(C)BJ. Hahaha! This was like, 3 fear foods at the same time :bread (more than 1 slice), a banana (one of the still wary fruits for me) and generally a PBJ. And what, pray tell, is the (C)B part??

photo-142

Coconut Bacon!! Please, please, please go make this ‘bacon’. It is addicting and amazing and insanely like bacon, as in it has the crunch texture that tempeh does not. I never even liked real bacon before I was vegan (too greasy and often burned) but this, this was delicious. But follow the directions. I know someone who almost shunned the recipe because she used shredded coconut, hot sesame oil, too much liquid smoke, and then burned it. Yeah, don’t do that. Do it this way…

Oh and by the way, the sandwich was delicious 😉 (tangent: Like my blueberry smile? That was a fail at cutting a loaf of bread, I only got the crust haha)

photo 3-55

Of course, I didn’t follow my routine when I made yesterday’s Cake Batter Milkshake for breakfast. Because it felt a little silly to have a smoothie followed by a smoothie ;).

photo-146

Lunches have mostly been salads. Obviously! They are such a perfect canvas: This one had lentils, grapes, broccoli, pepper, BBQ world peas, and a creamy dressing out of ketchup and a home made vegan tofu mayo. Plus squash on the side. Why fix something if it ain’t broke?

photo-145

Apple, cucumber, honey mustard, basalmic, and sea salt chickpeas that I won from Caitlin’s giveaway. They were kind enough to send me four flavors of chickpeas and one bar, since two of the three bars had dairy.

photo-128

They came in the mail right as we were leaving for a shopping trip, so they came in perfect handy when it was snack time! I thought these ones tasted like spicy fruit loops. I think everything with lime in it tastes like fruit loops though haha!

photo-137

These were my favorite of the savory ones! I haven’t tried the cinnamon ones, or the trail mix bar yet, but I am soon!! Thank you Caitlin, for my new addiction 😉

photo-133

Of course, I have switched it up a bit for lunches too! We made breakfast for lunch one day, with banana cinnamon french toast made with fresh Health Starts Here bread from Whole Paycheck, topped with fresh fruit, and a tofu scramble with more coconut bacon on top:)

One thing I haven’t taken a picture of? The sheer MASS of fresh fruit I’ve been eating. Like, at least my weight in fruit. Cherries, melon, berries, apples, you name it:) Summer, you’re my favorite:)

photo-126

I made sun tea for the first time ever!!! This was ginger peach, and it was so delicious!!

photo-129I also had my first evolution juice! It was…saltier…than I expected (celery) but really good!! I want a juicer so bad!!!

photo-139

We finished off the last of that raw german chocolate cake from Practically Raw (chef amber shea’s blog). If you have this cookbook, make this now. If you don’t, go get the cookbook (its an ebook) and make it now. Sooo good:)

photo 3-50

And, of course, my Birthday Cake Ice Cream🙂 This is post photo shoot, Yes its in a glass. Yes I licked it anyway. Ice cream tastes better without that pesky spoon amiright???

Don’t forget to check in later for day 3 of Birthday Week!! I have some cookies for youu!!!!!

How’s your summer been lately??

Let it Begin:)

Hey everyone!!! Sorry I haven’t been posting for a few days, but I’m gonna make up for it I swear!! First of all, Lets hear it for the first Marvelous Monday of Summer!!!

So, What have I been doing in my spare time??

photo-134

Besides enjoying my lazy free time?

photo-125

I celebrated my first day of summer with a chocolate milkshake studded with brownie pieces, because I could 😉

And then I cleaned out my binder…

photo-135

Actually make that 6 pounds of papers I no longer need (I found another stash after this). No wonder my arms ached after the school day!!

photo-138

I’ve been doing some baking (a raw german chocolate cake from the Practically Raw cookbook)

photo-136

…and some cleaning 😉 Note to myself: Scoop, don’t pour.

photo-140

Drinking lots of smoothies

photo-143

And conquering fear foods !! Delicious might I add!

And most marvelous of all?!?! My birthday is one week from today!! I’ll be turning the big 1-7, and you can bet I’m using this as an excuse to blog more often! I am here by declaring this week to be

Screen Shot 2013-06-02 at 4.42.45 PM

(like my home made graphic from Paint? hahaha I’m such a noob!)

At first I thought, doesn’t it seem a little self centered to focus an entire week on the internet to my birthday? Then I thought, Nah!!! Its my blog and if I want sprinkle themed recipes everyday, by gosh I’ll have them!!

So, my friends, I am attempting something I have never attempted before. It is my goal to give you a brand new, birthday themed, sprinkle adorned recipe every day this week, finished off with a cake that (hopefully) will blow your glittery socks off. Are you ready?!?

The first recipe will go up tonight…

Happy Monday!!!!

How has your summer been? Or are you still waiting?

Go-To Green Smoothie

Last year, my mom splurged and bought a Vita-Mix.

A red Vita-Mix (to match our kitchen)

With both a big and a small pitcher.

We were so excited!!! But now what?

We’ve made banana ice cream, vegan fondue, watermelon margaritas (virgin for me), and smoothies.

I know people call them green monsters, but I call it a smoothie. Thats because our first attempts were real monsters (shudder). Purply-brown, bitter, over sweet, sometimes they even tasted like tomato soup (not bad, unless its supposed to be a smoothie) you name it. Turned us off of green smoothies for a while. But this year, something changed, we figured out how to balance flavors nicely, and make a smoothie that was refreshing, alkalizing, energizing, and get this: GREEN!!!

This is our favorite, sure we make little changes here and there, it comes out different sometimes. Its not the only smoothie we make, but it is what we call the usual (or the youge(?), more often)

Go-To Green Smoothie

makes 2 large or 3 medium smoothies

  • 1 C. coconut water
  • 1 apple
  • 1/2 of a lemon (w/o peel)
  • 3 stalks of celery
  • 1/4-1/2 of a cucumber
  • 1-inch nub of fresh ginger (peeled)
  • handful of fresh parsley
  • 2-4 large handfuls of spinach (or kale, but you taste the kale)

Stick it all in a blender in that order (roughly), blend it up, pour, and enjoy!

Play around with the amount of ginger, and different fruits. One version we also like is with celery, lime, red and green apple, ginger, and spinach (sometimes we add PB2 and it tastes almost like thai:)

Warning: This smoothie is mostly veggies (ie my stepdad hates it, he says it tastes too green), and is not for the veggie faint of heart. A good way to get your green smoothie taste buds goin is to start with mostly fruit and a little green (I make my stapdad a smoothie with some frozen and some fresh banana, and strawberries, with just one handful of spinach), and slowly adding more green and less fruit. Once you are there, this is delicious and refreshing, trust me🙂
