WIAW beginning of the end

Its the last few days of summer….But its also WEDNESDAY!!!!!

On a slightly unrelated note, am I the only one who, when writing Wednesday out, says weD-NES-day in my head?Un-Tangent. On with the eats!!!photo-222Since my breakfasts have still been mostly smoothie bowls, I didn’t take pictures of them. BUT I did take a picture when I DIDNT have a smoothie for breakie!!! Here we have oatmeal topped with grapes, apple and strawberries, all smothered in peanut butter sauce. Basically PB&J but with the whole fruits!! Grapes on oatmeal? Actually pretty good!!photo-224And once I got reeeeaaallllyyy fancy and made pancakes!!! Using Living Intentions sprouted super flour (review coming soon!) I made sweet cinnamon almond pancakes with peanut butter banana fluff and peaches -so good!! Why don’t I make creative (read not oatmeal or smoothies) breakfasts more often??photo-215Monster salads have always been making lunch appearances. Lettuce, all the veggies, a multitude of condiments, beans and world peas, and nutritional yeast 🙂 photo-217I decided to give Kevita another chance…nope still like Kombucha better.photo-227My latest smoothie obsession has been using frozen cantaloupe -so I got two just to freeze….insert inappropriate jokes about melons and balls here. Yes, I am in fact still a teenager. 😉photo-219A delicious vegan meal at Baagan that I shared with my momma the other day -massaged kale salad, mushroom quesadillas and a morrocan millet salad (MUST RECREATE)photo-225Oh wait, no, i can’t go one single WIAW without a smoothie bowl. But I actually didn’t have this for breakfast! This was a really super late dinner that I didn’t feel like cooking for, and it was like dessert and dinner at the same time (don’t let the color fool you, it was sweet and fruity and also our kitchen is yellow so the lighting is icky haha!)photo-220I blended up soy yogurt, bananas, and frozen berries then stuck it in the ice cream machine and BAM instant froyo!! I dropped my little sister off for her first day of kindergarten this morning!!! Ahhh she is getting so big!!! I don’t start school till monday, but I wanted a kindergarten/senior year photo so I wore my senior shirt (yes, I made it). WIAW like, all the time.

 

So I’ve lately kinda gotten into the habit of doing WIAW posts every-other-Wednesday (or less often), but then I have so many pictures that these things run kind of long. And I’ve been eating variations of similar things a lot, so its just kind of a lot of repeat pictures. I mean, lately its been smoothies, salads, and anything I can eat with my hands. And dessert. Like, all the time.

 

So what do I mean by that? Well lets start at breakfast…

Aaannndddd once in a while, oatmeal. But still topped, as though it is a smoothie bowl. Yes, this is carrot-ginger topped with green apple. I’m weird.

but on the days I didn’t have a smoothie for breakfast, I will usually have one in the afternoon. Lately I’ve been obsessed with a matcha-melon-mint combo with frozen cantaloupe, coconut water, a bit of banana, fresh mint, lemon, ginger, matcha powder, and spinach. mmmm…. so good! Plus it helps soothe my tummy whenever I OD on…

Oh oh! And I made more veggie burgers for my little sister’s B-day BBQ – my big sister and her boyfriend are doing the 21-day vegan kickstart so I decided to make sure there was food for us

I can’t believe another year has passed. Just yesterday I was writing this post for her, and now she is 5 years old and starting Kindergarten in a week!!! (she starts kindergarten the same year I start senior year -how cute is that!)

Sometimes I experiment and prove that you can make chocolate pudding out of just about anything. Like this clean-out-the-fridge version with avocado, leftover squash, leftover black beans, leftover shredded veggies, almond milk, cocoa powder, banana, and something sweet. and you know, vanilla, salt, xanthan gum etc etc. I must be magic or something because this was delicious haha!

We have had a lot of bananas on hand lately, after all….6 lbs, but SHOOT IT WAS 99 CENTS!!! (hahaha….) The rest all got frozen

And sometimes, I’m just thankful that cookies are kind of hard to mess up. Like when you heat the oven almost 100 degrees hotter than the recipe called for. Sweet potatoes may be cooked at 425, but cookies should be at 350…Thank goodness they were fine haha!!

MIMM: Hot Hot Hot!!!

Happy Monday!!!First of all, I want to give a BIG HUGE CONGRATS to Katie, the lovely diva who hosts this marvelous party, and her beautiful baby boy, Rocco. What a wonderful gift to be given! I wish the whole family the best! 😀This past weekend has been a marvelous one!!With one exception…photo-2Heat. Wave. uuuuggghhhhh. It was all weird, cold and rainy exactly one week ago, and by Wednesday the temperatures were scorching again! This is day 4 of 105+  heat, and its funny because we can’t wait for 9pm, when it reaches a nice, cool 90 haha!photo-180Of course, warm evenings are made all the more enjoyable when outside, and we finally got lights up on our gazebo!! Its so nice to just relax and stare at the lights like a moth enjoy the pretty lights!!photo-177Luckily it doesn’t start heating up until about 9 am, so its finally gotten me back in the habit of early morning runs! Wake up, grab a nut butter stuffed date and off I go! There is no better time to run than first thing in the morning, the air is still (relatively) crisp, scented with dew and sprinklers, and the only sounds are the birds singing, and your feet hitting the pavement in tune with the earth’s heartbeat (like that? Can I be a poet like you now TGITO?? 😉 )photo-3Basically. Otherwise its too hot.photo-172And when I come back from the early morning runs, I have time (and motivation) to make fancier breakfasts!! This morning I made my mom and I blueberry cornmeal pancakes topped with fresh farmers market peaches! So good!Speaking of running, didn’t I ever tell you guys???photo-179I am officially signed up to run my first ever Half Marathon this October!! Whoo!! I’m sooo excited!! I’ve been wanting to run a half before I graduate basically since I discovered I actually liked running freshman year, and its finally happening! This is such a great testimonial to myself too, that I am finally in a place where I can run and be stronger, not weaker, from it. Its a symbol of the test I’ve had in high school, and that I can conquer anything I put my mind to. I am stronger than I gave myself credit for for so long, and I can tackle mountains (well, hills, but San Fransisco is crazy hilly so if you add them up, its a mountain. kapeesh?)photo-178Also Marvelous are Starbucks dates….with myself. But hey, if it motivates me to do my summer reading (I’d so much rather read books of my own choosing…). I heard from Amanda that if you order Starbucks cappuccinos dry, you get them perfectly foamy (my favorite part). She was right! Soy cappuccino, decaf and dry-I drank the coffee part and then added a dash of cinnamon to my cup of foam. Lets just say that I was that weirdo in the corner reading and eating foam with a coffee stirrer. #foamobsession #sorrynotsorry 😉photo-174Marvelous still are farmers market hauls -especially at the end of the day so everything is even cheaper! We got that gigantic bag of peaches for only $2, and they are super ripe-almost jam like. I have to cook with them before they go bad!! We also found a beautiful head of crisp romaine, chinese spinach (its so pretty! Purple and green!), a pomegranate balsamic grill sauce, and fresh, handmade vegan ravioli! I’ve never had fresh pasta so I’m excited.photo-173A marvelous, refreshing,  and simple salad for dinner (squash on the side) of Farmers Market romaine and tomatoes, plus cucumber, celery, red onion, avocado, tempeh, chickpeas, and a honey mustard dressing and lemon pepper (post photo). I’ve never had a crisper salad than one fresh from the farmers market that morning!photo-176And perhaps most marvelous of all? Its girls week! My stepdad is with his dad and cousin in Washington state this week, visiting museums and baseball parks, so my mom and I have had the house to ourself. Its officially Chocolate and Chickflicks week around here! Perfect for my newfound obsession with chocolate avocado mousse and Friends reruns. So with cool morning runs filled with deep thoughts, farmers market runs, and daily chocolate, life could not get any marvelous-er 😉Have you been caught in a heatwave this week?Whats your marvelous today?

WIAW summer (finally!) edition

Happy first WIAW of Summer Break!! Whoo!!! Let’s give a round of applause to the lovely Jenn who puts on this party!!

I’ve made it my goal this summer to try and have one smoothie or juice every day (or at least almost every day), and so I’ve been starting every morning out with a green smoothie! It’s nice to wake up my tummy and body with all those nutrients so easily available, and it has so far seemed to wake me up and prevented bloating through out the day (sorry, I get bloated easily…#addictedtowatermelon #andsquash 😉 )

The past few days I’ve had it with apple, celery, lemon, ginger, water or coconut water, spinach and ice, and today I exchanged the ice and apple for frozen watermelon and added some parsley 🙂

and stepping way outside my comfort some with a PBB(C)BJ. Hahaha! This was like, 3 fear foods at the same time :bread (more than 1 slice), a banana (one of the still wary fruits for me) and generally a PBJ. And what, pray tell, is the (C)B part??

Coconut Bacon!! Please, please, please go make this ‘bacon’. It is addicting and amazing and insanely like bacon, as in it has the crunch texture that tempeh does not. I never even liked real bacon before I was vegan (too greasy and often burned) but this, this was delicious. But follow the directions. I know someone who almost shunned the recipe because she used shredded coconut, hot sesame oil, too much liquid smoke, and then burned it. Yeah, don’t do that. Do it this way…

Oh and by the way, the sandwich was delicious 😉 (tangent: Like my blueberry smile? That was a fail at cutting a loaf of bread, I only got the crust haha)

Of course, I didn’t follow my routine when I made yesterday’s Cake Batter Milkshake for breakfast. Because it felt a little silly to have a smoothie followed by a smoothie ;).

Lunches have mostly been salads. Obviously! They are such a perfect canvas: This one had lentils, grapes, broccoli, pepper, BBQ world peas, and a creamy dressing out of ketchup and a home made vegan tofu mayo. Plus squash on the side. Why fix something if it ain’t broke?

Apple, cucumber, honey mustard, basalmic, and sea salt chickpeas that I won from Caitlin’s giveaway. They were kind enough to send me four flavors of chickpeas and one bar, since two of the three bars had dairy.

They came in the mail right as we were leaving for a shopping trip, so they came in perfect handy when it was snack time! I thought these ones tasted like spicy fruit loops. I think everything with lime in it tastes like fruit loops though haha!

These were my favorite of the savory ones! I haven’t tried the cinnamon ones, or the trail mix bar yet, but I am soon!! Thank you Caitlin, for my new addiction 😉

Of course, I have switched it up a bit for lunches too! We made breakfast for lunch one day, with banana cinnamon french toast made with fresh Health Starts Here bread from Whole Paycheck, topped with fresh fruit, and a tofu scramble with more coconut bacon on top:)

One thing I haven’t taken a picture of? The sheer MASS of fresh fruit I’ve been eating. Like, at least my weight in fruit. Cherries, melon, berries, apples, you name it:) Summer, you’re my favorite:)

I made sun tea for the first time ever!!! This was ginger peach, and it was so delicious!!

photo-129I also had my first evolution juice! It was…saltier…than I expected (celery) but really good!! I want a juicer so bad!!!

How’s your summer been lately??

WIAW: Something old, Something new, and Someone easily amused

Happy WIAW guys!!!Thank you to the Lovely Jenn (that is her name now, Lovely Jenn 😉 ) for this party every week. Now Lets get started!photo-79Breakfasts are nothing new usually (you all know I like my oats and nut butter) -Im generally on auto pilot in the mornings. But wait! What is that flavor of nut butter???photo-72Ahhhh!!!! Look what came to my grocery store!!! 😀 The vanilla espresso was highest on my list and it is amazing (honey pretzel-you are next)photo-70Also, it is delicious in Katie’s Cookie Dough Dip (made with dates, espresso nut butter, and eaten solely with a spoon because I have no shame)photo-76But with the return of warmer days (and also spring break so longer mornings) come breakfast parfaits! whoop!! This was vanilla-almond-cinnamon overnight oats, lemony soy yogurt, berries and pears, and cascading farms ‘fruit loops’.photo-68I made these just a few days ago, and every single one is gone (whomp whomp). At least that massive craving for banana nut bread is satisfied!
