And to make this post a bit more interesting. I discovered how to make cheater kombucha 🙂
Take a can of zevia (any flavor will do! I made ‘apple pie’ kombucha with cream soda zevia and cinnamon!), pour it into a cup to let the fizzles go down, add a dash (tablespoon or so) of apple cider vinegar and your good to go!! You get the vinegary-ness from the acv, and the sweet, slightly fizzy, flavored part from the soda. If you need to add a bit of sweetener, go right ahead -but this costs wwwaaaayyyyyy less than bottled kombucha and the acv has a ton of benefits (even if its not quite the same as ‘real’ kombucha). And you can make any flavor you like!

Whooo! April is over! That was insane. Way too busy. Now I only have one more week (next week) of busyness from a dance show and AP tests and its a free ride till summer. getherefasterplease
April was full of too many days like this:School followed by auditions followed by eating in the locker room while doing hair and makeup for my musical. AKA bringing more food, clothes, and makeup to school than school supplies. Thank you 14 hour school days, I am through with ye!!By the way, that was sweet potatoes, curried veggies and an indian spiced veggie burger ;)Not every meal was this crazy though! How about some recent eats yeah?Blueberry and green apple oats topped with almond butterAnd more recently: Red pear oatmeal topped with what Im calling “final stretch” almond butter. AKA homemade Coffee- chocolate -Get through AP tests and Finals-almond butter. Not quite good enough to post yet though, unless you reeeeaallllyyy like intense coffee flavor 😉This was actually a lunch! Mexican tofu breakfast burrito in an Udis GF spinach tortilla (<quickly becoming my favorites)First watermelon of the season from Trader Joes!! Was slightly dissapointingObviously I cared. I may have been the only one eating it and it may have been gone in 4 days…Ugly pic, one of the best pizzas of my life!! We made this crust and ‘cheese’ sauce with almond butter instead of pine nuts, and topped it with a polynesian/bbq tomato sauce, red and green onions, mushrooms, zucchini and pineapple. Ahhhhhhssoooogooodd!!!!!!Island bbq portabello burgers on toast with sweet potatoes and broccoliFresh coffee flavored kombucha on tap at Earth Day. This was awesome.Vegetarian Ethiopian Plate (also at earth day)And a vegan lemon lime ice cream popsicle from Dave Pops (also at Earth Day!)The new Luna Bar, because I found it at Target. Not bad, not my favorite but pretty good!Okay. Im addicted. Sorry! (this one tastes like Gingerale!)Ginger noodlesAnd quinoa brownies for dessert!!!FYI, if you make them with flax eggs and almond butter (instead of chicken eggs and oil), they come out more like baked pudding/custard, since flax doesn’t bake the way eggs do. But they are still delicious and fudgy and awesome!!Who’s ready for summer??
Happy WIAW guys!!!Thank you to the Lovely Jenn (that is her name now, Lovely Jenn 😉 ) for this party every week. Now Lets get started!Breakfasts are nothing new usually (you all know I like my oats and nut butter) -Im generally on auto pilot in the mornings. But wait! What is that flavor of nut butter???Ahhhh!!!! Look what came to my grocery store!!! 😀 The vanilla espresso was highest on my list and it is amazing (honey pretzel-you are next)Also, it is delicious in Katie’s Cookie Dough Dip (made with dates, espresso nut butter, and eaten solely with a spoon because I have no shame)But with the return of warmer days (and also spring break so longer mornings) come breakfast parfaits! whoop!! This was vanilla-almond-cinnamon overnight oats, lemony soy yogurt, berries and pears, and cascading farms ‘fruit loops’.I made these just a few days ago, and every single one is gone (whomp whomp). At least that massive craving for banana nut bread is satisfied! Keep a lookout for a carroty easter version within the week (aka as soon as our carrot supply is replenished-teehee sorry i eat all the carrots)Hey look! Its my favorite salad! (beans, veggies, squash, cranberries and mustard)And then another salad because I was pretending it was summer and caved on the Driscolls. They were unsatisfactoryObviously I didn’t care and just ate them with chocolate (pudding)But then it got all cold and rainy so I decided to roast some potatoes and carrots and that turned into all the veggies and that turned into stew. Still in the roasting pan…(fun to wash)I like kombucha. It makes me feel like a yogi.I also like popcorn. I often stand there mesmerized by the magic of an air popper 😉Last night I made mexican pizzas for all! Brown rice tortilla topped with refried beans, shredded veggies, and asparagus/onion/corn cooked with salsa, popped in the oven at 400 until warm and crispy. It was kinda like a gigantic nacho!Anndd in other news:I go to Trader Joes for my nuts (they were out of almond butter again! Blast! So I had to make my own)Someone posted this on Facebook….heheheAND I GOT MY PROM DRESS!!!!!!!!
