WIAW beginning of the end

Its the last few days of summer….But its also WEDNESDAY!!!!!

On a slightly unrelated note, am I the only one who, when writing Wednesday out, says weD-NES-day in my head?Un-Tangent. On with the eats!!!photo-222Since my breakfasts have still been mostly smoothie bowls, I didn’t take pictures of them. BUT I did take a picture when I DIDNT have a smoothie for breakie!!! Here we have oatmeal topped with grapes, apple and strawberries, all smothered in peanut butter sauce. Basically PB&J but with the whole fruits!! Grapes on oatmeal? Actually pretty good!!photo-224And once I got reeeeaaallllyyy fancy and made pancakes!!! Using Living Intentions sprouted super flour (review coming soon!) I made sweet cinnamon almond pancakes with peanut butter banana fluff and peaches -so good!! Why don’t I make creative (read not oatmeal or smoothies) breakfasts more often??photo-215Monster salads have always been making lunch appearances. Lettuce, all the veggies, a multitude of condiments, beans and world peas, and nutritional yeast 🙂 photo-217I decided to give Kevita another chance…nope still like Kombucha better.photo-227My latest smoothie obsession has been using frozen cantaloupe -so I got two just to freeze….insert inappropriate jokes about melons and balls here. Yes, I am in fact still a teenager. 😉photo-219A delicious vegan meal at Baagan that I shared with my momma the other day -massaged kale salad, mushroom quesadillas and a morrocan millet salad (MUST RECREATE)photo-225Oh wait, no, i can’t go one single WIAW without a smoothie bowl. But I actually didn’t have this for breakfast! This was a really super late dinner that I didn’t feel like cooking for, and it was like dessert and dinner at the same time (don’t let the color fool you, it was sweet and fruity and also our kitchen is yellow so the lighting is icky haha!)photo-220I blended up soy yogurt, bananas, and frozen berries then stuck it in the ice cream machine and BAM instant froyo!! So good, it tasted like Jamba Juice!photo-218Fruit has been absolutely gorgeous lately -I think its my favorite subject to photograph!photo-226Of course, cookies are always pretty too 😉 Oatmeal raisin cookies I baked for my mom’s class!!photo-223Cinnamon espresso ice cream that I made and yet have no recipe for because I was just creating! I dropped my little sister off for her first day of kindergarten this morning!!! Ahhh she is getting so big!!! I don’t start school till monday, but I wanted a kindergarten/senior year photo so I wore my senior shirt (yes, I made it). I can’t believe that this day has come-time flies so quickly!!! Today is the last day to enter my Journey Bar giveaway!! I will pick a winner tonight so check back soon!!

Chocolate Cherry Matcha Shake

So you may remember how I mentioned that we are in the middle of a heat wave.

I have hardly left the house for the past couple of days, instead we have been cleaning.

You can only take so much cleaning.

We (meaning my mother and I) needed an afternoon pick me up -something cold and energizing…

My mom wanted matcha. I wanted chocolate (I’ve been in an Eat ALL the chocolate!!! mood lately)

But would chocolate and green tea be good together????

We debated for a good 5 minutes -chocolate matcha or peach matcha? Chocolate or peach? Peach or chocolate?

We went with chocolate.

Life is rough.

Chocolate Cherry Matcha Shake

serves 2

  • 1/2 cup Dark Chocolate almond milk, frozen (about 6 ice cubes)*
  • 1 C. frozen dark sweet cherries
  • 1-1 1/2 C. non dairy milk
  • 1/2 tsp vanilla extract
  • 2 T. dark cocoa powder (or 3 T. regular)
  • 1 1/2 T. Matcha green tea powder
  • 1/4 – 1/2 tsp stevia, or other sweetener (to taste)

Blend everything up!! Thats it:)

*We have taken to keeping a stash of almond milk in ice cube trays in the freezer for creamier smoothies and the like:), and just so happened to have a bit of chocolate almond milk in the freezer. If you don’t have the chocolate almond milk, just add a bit more cocoa powder and sweet 🙂

This was perfect! Cool, creamy, and refreshing, the dark, rich chocolate balanced perfectly with the grassy freshness of the matcha, plus a hint of fruity sweetness from the cherries!

Well, sometimes you find yourself about to leave for a week with two GIANT zucchinis, a huge bunch of veganic* chard, and a large bag of baby potatoes…hence the veggie filled dinner…

*veganic is food grown organically (no pesticides) without animal fertilizers. So it’s vegan-organic. Get it? Theres a veganic farm at a near farm sanctuary. No risk of E.Coli or other diseases!!!

And yes, that would be bananas, tortillas, and avocados. I also froze half of a breakfast cake. Deal.

sometimes you turn fails (lemon tofu frosting with WAY too much xanthan gum…) into successes (lemon vanilla ginger apricot ice cream/sorbet) ice cream is kept in the freezer. I am justified.

and by “my mom caught me” I mean I giggled about how funny it would be if she had, contemplated asking her to take a picture of what I was doing, and decided to take a selfie instead. #noshame. #iputhashtagsinmyblogeventhoughtheyarepointlesshere #dealwithit. 😉

And with that we are all set and ready to leave in the AM!!!

For the next 5 days I am going on a college tour to visit UC Santa Barbara, Pepperdine, UCLA, UC San Diego, and San Diego State University. I may or may not blog in the next few days, but I will take lots of pictures for you I promise!!!

Birthday Week: Birthday Cake Ice Cream!

Its the beginning of Birthday Week!!! What is birthday week? Well, since my birthday is in 7 days, I decided to challenge myself to come up with a different, birthday themed recipe every day this week, all leading up to what I hope to be a cake that will knock your sprinkles off!!!

At first I thought, wouldn’t an entire week dedicated to my birthday come across as a little, well, self centered?

Then I thought, well, it is my blog, and it is my birthday, and since I am a princess…

I decided to do it anyway. Besides, who doesn’t love their birthday?

More importantly, who doesn’t like sprinkles?!?!

To kick off birthday week, I thought I would combine the two ultimate party desserts: Cake and Ice Cream, into one delicious, creamy treat!!

Birthday Cake Ice Cream!!!

Well, to be honest, its been sooo hot here lately, I didn’t really feel like baking. But the 102 degree days are supposed to give way to the low 90’s, so I think I’ll survive Birthday Week.

As long as I can eat this while I wait for the oven 😉

I based the recipe loosely off of my previous ice cream recipes, and then I added sprinkles..

lots of sprinkles;) Because life is so much better with them!!

Birthday Cake Ice Cream

  • 2 C. Cooked, peeled Japanese Sweet Potato
  • 2 T. Almond or Cashew butter
  • 2.5 C. almond milk (or nd milk of choice)
  • 2 T. Maple Syrup
  • 3 T. Vanilla extract
  • 1 tsp almond extract
  • 1/4 tsp butter extract
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 2 T. shredded coconut
  • 2 T. coconut flour
  • 1 T. xanthan gum
  • dash salt
  • sweetener of choice to taste (I used maybe 1-1 1/4 tsp stevia)
  • SPRINKLES!!!

Blend all ingredients very very well (like in a vitamix). Set in a container for a few hours or over night in the fridge to set and cool. When it’s ready, pour into your ice cream machine as per the instructions (I’m sure you could do this without a machine too, just freeze it and stir, freeze and stir). When it’s aaallllmmmost done, pour in your sprinkles. Seriously, don’t be shy with these ;). Once the sprinkles are all mixed in, scoop into a container and eat right away or freeze!!
