WIAWhen its that awkward between seasons time

Happy Humpday everybody!!!!

Sorry I’m a bit late to the party, but hey I made it! Yes, for the first time since school started, my week day workload is finally somewhat manageable, and I couldn’t wait to show you my pretty food pictures! Come on, tell me you don’t do that too.

“I think this is such a pretty food picture but I have to save it for Wednesday!!!”

Truth. Anyway, even though it is still, albeit barely, August, I’ve started to crave fall. Pumpkin, cinnamon, boots and cozy blankets and tea. Yes. Alas, its still summer. So my eats are a little mood-swingy haha!!photo-256See on the summer spectrum, I still love big green smoothies -this is a melon-pineapple-matcha-mint and ginger combo (plus lemon and spinach). So refreshing!photo 3-120But I’ve also been getting into oatmeal a lot more recently. Solution? Summer fruit oats! Topped with blueberries, grapes, kiwi and watermelon, because why not? Eeeeexactly.photo 5-77Still, this morning, all bets were off. Its fall enough for me!!! Pumpkin spice oats with apples:)photo-255My main meals vary, anything from ‘hippie bowls’ -rice, veggies, beans, nooch, random condiments etc…photo-252To spring rolls (ahem summer…)photo-251And back to warm, orangey deliciousness!! Broccoli, falafel and sweet potatoes topped with tahini sauce and spicy ketchupphoto-249Even my drinks have gone from sweet and creamy (ever mixed zevia root beer with iced almond milk coffee? Do it. Its like a grown up root beer float)photo 1-120To fruity green smoothies! Watermelon, lime, mint, ginger, spinach and ice 🙂 Soo good

photo-254

I’ve been hoarding as much fresh summer fruit as I can before its all gone…

photo-250

But alas, pumpkin strikes again!! Did you know that a box of spice cake mix plus a can of pumpkin makes the best, cheater pumpkin bread/cake ever? Bonus points for adding chopped apple!!

photo 2-124

But of course, we cannot forget the ice cream. Chocolate (and cinnamon -see its everywhere) homemade ice cream with peanut butter sauce

photo-247

And lots of Cookie Dough… Always.

I know its still Summer, but have you started to “crave” Fall? Confession: Its gotten so bad that I had pumpkin/orange at every meal today. Pumpkin oats, sweet potatoes at lunch, kabocha at dinner, and pumpkin pie ice cream (home made, once I tweak the recipe I’ll post it!) for dessert!! Commence my lovely self-tanning habits of Autumn!

WIAW like, all the time.

So I’ve lately kinda gotten into the habit of doing WIAW posts every-other-Wednesday (or less often), but then I have so many pictures that these things run kind of long. And I’ve been eating variations of similar things a lot, so its just kind of a lot of repeat pictures. I mean, lately its been smoothies, salads, and anything I can eat with my hands. And dessert. Like, all the time.

So what do I mean by that? Well lets start at breakfast…

photo 2-105

Smoothie Bowl

Smoothie Bowl

photo 2-101

Acai Bowl (from a restaurant in Santa Cruz, but you know…still.)

photo 1-100

Aaannndddd once in a while, oatmeal. But still topped, as though it is a smoothie bowl. Yes, this is carrot-ginger topped with green apple. I’m weird.

photo 1-98

but on the days I didn’t have a smoothie for breakfast, I will usually have one in the afternoon. Lately I’ve been obsessed with a matcha-melon-mint combo with frozen cantaloupe, coconut water, a bit of banana, fresh mint, lemon, ginger, matcha powder, and spinach. mmmm…. so good! Plus it helps soothe my tummy whenever I OD on…

photo 4-88

Kabocha. Which happens like, all the time. 😉

photo 2-104

Kombucha (melon, on tap) helps too. Plus I like this glass. tangent alert.

photo 4-93photo 2-100photo 3-100

What? I just like fruit and veggies okay??

photo 4-90Sometimes I get creative, and set out the stuff for wraps…Chard wraps with brown rice, sweet potato, beans and veggies.photo 5-63

The giant chard made for a chipotle burrito worthy wrap ohmygosh.

photo 5-64photo 5-65

The same concept goes for fajita night (also: if you cook lentils and flavor them like refried beans, they serve as refried beans.)

photo 5-61

I’ve also made a lot of veggie burgers. Jen’s triple bean chili burgers are ah-mazing btw

photo 2-107

Oh oh! And I made more veggie burgers for my little sister’s B-day BBQ – my big sister and her boyfriend are doing the 21-day vegan kickstart so I decided to make sure there was food for us

I can’t believe another year has passed. Just yesterday I was writing this post for her, and now she is 5 years old and starting Kindergarten in a week!!! (she starts kindergarten the same year I start senior year -how cute is that!)

photo 3-102

Nothing says Happy Birthday like a decapitated unicorn hanging over a swarm of children fighting over it’s candy insides…Pinatas are violent….hahaha

photo 4-94

I also made lemon cupcakes with a raspberry ‘frosting’

Oh yeah….about dessert

photo 5-66

Sometimes I eat it in the afternoon -peach soft serve-you know, when I’m not eating a smoothie. Our Vitamix has been feeling the love

photo 2-106

or straight out of the freezer – homemade chocolate covered bananas topped with PB2

photo 5-67

Sometimes I experiment and prove that you can make chocolate pudding out of just about anything. Like this clean-out-the-fridge version with avocado, leftover squash, leftover black beans, leftover shredded veggies, almond milk, cocoa powder, banana, and something sweet. and you know, vanilla, salt, xanthan gum etc etc. I must be magic or something because this was delicious haha!

photo 5-62

Sometimes I get fancy -banana bread baked in a cake pan, topped with a PB2 ‘frosting’ and crushed chocolate chips

photo 4-91

We have had a lot of bananas on hand lately, after all….6 lbs, but SHOOT IT WAS 99 CENTS!!! (hahaha….) The rest all got frozen

photo 2-102

And sometimes, I’m just thankful that cookies are kind of hard to mess up. Like when you heat the oven almost 100 degrees hotter than the recipe called for. Sweet potatoes may be cooked at 425, but cookies should be at 350…Thank goodness they were fine haha!!

photo 4-92

And don’t forget to enter my JOURNEY BAR GIVEAWAY!!!!! I’ll announce a winner next week, so keep those entries coming like, all the time!!!!!!!!

Do you tend to just repeat the same things over and over (and over?)

WIAW!!

AAHHH! Its my 100th post!!! this is cool! I have a recipe coming for you soon 🙂

In other news happy Wednesday!!

Lets get to the eats!

photo 2-84

Vanilla cinnamon oats topped with strawberries and almonds

photo 5-46

Tropical smoothie (froz mango, bloobs, tropical VEGA, spinach) topped with granola

photo-160

Mixed banana berry smoothie topped with strawberry raspberry granola. These are my new favorite thing after eating an acai bowl almost every stinkin day in Southern California

photo-156

Of course, I could never let a perfectly good OIAJ opportunity go to waste! Peach, apple, blueberry oats with (homemade) almond butter

photo-161

My family had a spring roll bar for lunch the other day! Carrots, beets, cucumber and local 5 spice tofu. I had more than this, don’t worry 🙂 It was just a pretty picture! And delicious in peanut sauce.

photo-162

Uhh, duh. Kabocha…What were you expecting? 😉

photo 3-74

On Fathers day I made a picnic for my dad and step siblings! I brought the fixins for sun butter and jelly sandwiches, grapes, carrot sticks, and freshly made chocolate chip cookies using this recipe. They were just slightly under baked and perfect 🙂

photo 5-47

Please, please tell me you’ve tried dipping grapes in nut butter. Its delicious and tastes like straight up PB&J. Especially if its peanut butter and those really dark, sweet purple grapes. Heaven. Ignore the nasty napkin 😉

photo 1-73

We had a vegan BBQ/Pot luck the other day! An assortment of spanish rice, quinoa salad, pasta salad, fruit and fresh veganic veggies, and a veggie dog. I think I am officially past the whole “transition foods” stage of veganism, because I didn’t really like the veggie dog. Any of that fake stuff-fake meat, fake cheese, etc just doesn’t appeal to me. I’d rather eat real food, thats not trying to be something its not. Superficial vegan food 😉

photo 2-76

Soy ice cream on the other hand, thats perfectly fine with me 🙂 Especially with brownies and peanut butter cookie dough bites!

photo-168

Very rarely does a container of figs actually make it home. Everytime we buy them, my mom and I go through the whole display to find the most ripe ones, make our own little basket full, and eat them all on the car ride home. Its like a tradition 😉 Also this fig was huge. I had to show you guys.

photo-169

Have you ever heard of a Santa Clause Melon? Its like a cross between cantaloupe and honeydew, and it looks like a green football on the outside. Anyway, I found it at WF and its delicious. I had it on a salad with Braggs Braggberry dressing (blueberry, raspberry, acai, gogi, grape, and ACV. Totes recreating it)

photo-165

Our weather was super weird a few days ago, and it went from 90’s to 60’s and raining in 2 days. Now its in the 90’s again and will be 106 on Monday. Ouch. Anyway, I just so happened to be sick on the rainy day, so I spent all day on the couch reading and ate a mug of split pea soup for lunch. If only I hadn’t been sick I would have been so cozy!

photo-164

Later that afternoon I decided I didn’t like being sick. I now believe in the healing powers of rest and green smoothies. I made a huge smoothie with santa clause melon, lemon, ginger, celery, cucumber, parsley and power greens lettuce mix. I tell you what, this sick affected my whole family for 3-4 days, and I was only sick for one. All Hail the Smoothie!!!

photo-163

Movie snack! Apple, puffins and almonds with warm vanilla milk (almond milk, stevia, and vanilla extract. A slightly healthier version of the vanilla milk I grew up making (read cows milk and spoonful upon heaping spoonful of sugar. Like sickly sweet. I know, great for a 5 year old before bedtime) and like better than hot cocoa!) I had this while watching Warm Bodies, which I highly recommend!!

photo-167

Island Portabella burgers with grilled pineapple and baked sweet potato fries on the side. This was delicious 🙂
photo-166

And here we have baked japanese sweet potato topped with cheater baked beans and coconut bacon, plus a side salad. How to make cheater baked beans: We followed Happy Herbivore’s recipe but on stovetop, and using kidney beans plus corn. Since we weren’t actually going to bake them, we mashed the beans a bit and that thickened the whole dish up quite nicely! This was really really good!

photo-170

And last but not least, a bit of a sneak peak of that recipe I will be sharing shortly!! Doesn’t it look good???

Hehehe:)

Had any weird weather lately?

Whats your latest breakfast obsession?

Go-To Green Smoothie

Last year, my mom splurged and bought a Vita-Mix.

A red Vita-Mix (to match our kitchen)

With both a big and a small pitcher.

We were so excited!!! But now what?

We’ve made banana ice cream, vegan fondue, watermelon margaritas (virgin for me), and smoothies.

I know people call them green monsters, but I call it a smoothie. Thats because our first attempts were real monsters (shudder). Purply-brown, bitter, over sweet, sometimes they even tasted like tomato soup (not bad, unless its supposed to be a smoothie) you name it. Turned us off of green smoothies for a while. But this year, something changed, we figured out how to balance flavors nicely, and make a smoothie that was refreshing, alkalizing, energizing, and get this: GREEN!!!

This is our favorite, sure we make little changes here and there, it comes out different sometimes. Its not the only smoothie we make, but it is what we call the usual (or the youge(?), more often)

Go-To Green Smoothie

makes 2 large or 3 medium smoothies

  • 1 C. coconut water
  • 1 apple
  • 1/2 of a lemon (w/o peel)
  • 3 stalks of celery
  • 1/4-1/2 of a cucumber
  • 1-inch nub of fresh ginger (peeled)
  • handful of fresh parsley
  • 2-4 large handfuls of spinach (or kale, but you taste the kale)

Stick it all in a blender in that order (roughly), blend it up, pour, and enjoy!

Play around with the amount of ginger, and different fruits. One version we also like is with celery, lime, red and green apple, ginger, and spinach (sometimes we add PB2 and it tastes almost like thai:)

Warning: This smoothie is mostly veggies (ie my stepdad hates it, he says it tastes too green), and is not for the veggie faint of heart. A good way to get your green smoothie taste buds goin is to start with mostly fruit and a little green (I make my stapdad a smoothie with some frozen and some fresh banana, and strawberries, with just one handful of spinach), and slowly adding more green and less fruit. Once you are there, this is delicious and refreshing, trust me🙂
