WIAW like, all the time.

 

So I’ve lately kinda gotten into the habit of doing WIAW posts every-other-Wednesday (or less often), but then I have so many pictures that these things run kind of long. And I’ve been eating variations of similar things a lot, so its just kind of a lot of repeat pictures. I mean, lately its been smoothies, salads, and anything I can eat with my hands. And dessert. Like, all the time.

 

So what do I mean by that? Well lets start at breakfast…

Aaannndddd once in a while, oatmeal. But still topped, as though it is a smoothie bowl. Yes, this is carrot-ginger topped with green apple. I’m weird.

but on the days I didn’t have a smoothie for breakfast, I will usually have one in the afternoon. Lately I’ve been obsessed with a matcha-melon-mint combo with frozen cantaloupe, coconut water, a bit of banana, fresh mint, lemon, ginger, matcha powder, and spinach. mmmm…. so good! Plus it helps soothe my tummy whenever I OD on…

Oh oh! And I made more veggie burgers for my little sister’s B-day BBQ – my big sister and her boyfriend are doing the 21-day vegan kickstart so I decided to make sure there was food for us

I can’t believe another year has passed. Just yesterday I was writing this post for her, and now she is 5 years old and starting Kindergarten in a week!!! (she starts kindergarten the same year I start senior year -how cute is that!)

Sometimes I experiment and prove that you can make chocolate pudding out of just about anything. Like this clean-out-the-fridge version with avocado, leftover squash, leftover black beans, leftover shredded veggies, almond milk, cocoa powder, banana, and something sweet. and you know, vanilla, salt, xanthan gum etc etc. I must be magic or something because this was delicious haha!

We have had a lot of bananas on hand lately, after all….6 lbs, but SHOOT IT WAS 99 CENTS!!! (hahaha….) The rest all got frozen

And sometimes, I’m just thankful that cookies are kind of hard to mess up. Like when you heat the oven almost 100 degrees hotter than the recipe called for. Sweet potatoes may be cooked at 425, but cookies should be at 350…Thank goodness they were fine haha!!

Chocolate Cherry Matcha Shake

So you may remember how I mentioned that we are in the middle of a heat wave.

I have hardly left the house for the past couple of days, instead we have been cleaning.

You can only take so much cleaning.

We (meaning my mother and I) needed an afternoon pick me up -something cold and energizing…

My mom wanted matcha. I wanted chocolate (I’ve been in an Eat ALL the chocolate!!! mood lately)

But would chocolate and green tea be good together????

We debated for a good 5 minutes -chocolate matcha or peach matcha? Chocolate or peach? Peach or chocolate?

We went with chocolate.

Life is rough.

Chocolate Cherry Matcha Shake

serves 2

  • 1/2 cup Dark Chocolate almond milk, frozen (about 6 ice cubes)*
  • 1 C. frozen dark sweet cherries
  • 1-1 1/2 C. non dairy milk
  • 1/2 tsp vanilla extract
  • 2 T. dark cocoa powder (or 3 T. regular)
  • 1 1/2 T. Matcha green tea powder
  • 1/4 – 1/2 tsp stevia, or other sweetener (to taste)

Blend everything up!! Thats it:)

*We have taken to keeping a stash of almond milk in ice cube trays in the freezer for creamier smoothies and the like:), and just so happened to have a bit of chocolate almond milk in the freezer. If you don’t have the chocolate almond milk, just add a bit more cocoa powder and sweet 🙂

This was perfect! Cool, creamy, and refreshing, the dark, rich chocolate balanced perfectly with the grassy freshness of the matcha, plus a hint of fruity sweetness from the cherries!

MIMM: Hot Hot Hot!!!

Happy Monday!!!First of all, I want to give a BIG HUGE CONGRATS to Katie, the lovely diva who hosts this marvelous party, and her beautiful baby boy, Rocco. What a wonderful gift to be given! I wish the whole family the best! 😀This past weekend has been a marvelous one!!With one exception…photo-2Heat. Wave. uuuuggghhhhh. It was all weird, cold and rainy exactly one week ago, and by Wednesday the temperatures were scorching again! This is day 4 of 105+  heat, and its funny because we can’t wait for 9pm, when it reaches a nice, cool 90 haha!photo-180Of course, warm evenings are made all the more enjoyable when outside, and we finally got lights up on our gazebo!! Its so nice to just relax and stare at the lights like a moth enjoy the pretty lights!!photo-177Luckily it doesn’t start heating up until about 9 am, so its finally gotten me back in the habit of early morning runs! Wake up, grab a nut butter stuffed date and off I go! There is no better time to run than first thing in the morning, the air is still (relatively) crisp, scented with dew and sprinklers, and the only sounds are the birds singing, and your feet hitting the pavement in tune with the earth’s heartbeat (like that? Can I be a poet like you now TGITO?? 😉 )photo-3Basically. Otherwise its too hot.photo-172And when I come back from the early morning runs, I have time (and motivation) to make fancier breakfasts!! This morning I made my mom and I blueberry cornmeal pancakes topped with fresh farmers market peaches! So good!Speaking of running, didn’t I ever tell you guys???photo-179I am officially signed up to run my first ever Half Marathon this October!! Whoo!! I’m sooo excited!! I’ve been wanting to run a half before I graduate basically since I discovered I actually liked running freshman year, and its finally happening! This is such a great testimonial to myself too, that I am finally in a place where I can run and be stronger, not weaker, from it. Its a symbol of the test I’ve had in high school, and that I can conquer anything I put my mind to. I am stronger than I gave myself credit for for so long, and I can tackle mountains (well, hills, but San Fransisco is crazy hilly so if you add them up, its a mountain. kapeesh?)photo-178Also Marvelous are Starbucks dates….with myself. But hey, if it motivates me to do my summer reading (I’d so much rather read books of my own choosing…). I heard from Amanda that if you order Starbucks cappuccinos dry, you get them perfectly foamy (my favorite part). She was right! Soy cappuccino, decaf and dry-I drank the coffee part and then added a dash of cinnamon to my cup of foam. Lets just say that I was that weirdo in the corner reading and eating foam with a coffee stirrer. #foamobsession #sorrynotsorry 😉photo-174Marvelous still are farmers market hauls -especially at the end of the day so everything is even cheaper! We got that gigantic bag of peaches for only $2, and they are super ripe-almost jam like. I have to cook with them before they go bad!! We also found a beautiful head of crisp romaine, chinese spinach (its so pretty! Purple and green!), a pomegranate balsamic grill sauce, and fresh, handmade vegan ravioli! I’ve never had fresh pasta so I’m excited.photo-173A marvelous, refreshing,  and simple salad for dinner (squash on the side) of Farmers Market romaine and tomatoes, plus cucumber, celery, red onion, avocado, tempeh, chickpeas, and a honey mustard dressing and lemon pepper (post photo). I’ve never had a crisper salad than one fresh from the farmers market that morning!photo-176And perhaps most marvelous of all? Its girls week! My stepdad is with his dad and cousin in Washington state this week, visiting museums and baseball parks, so my mom and I have had the house to ourself. Its officially Chocolate and Chickflicks week around here! Perfect for my newfound obsession with chocolate avocado mousse and Friends reruns. So with cool morning runs filled with deep thoughts, farmers market runs, and daily chocolate, life could not get any marvelous-er 😉Have you been caught in a heatwave this week?Whats your marvelous today?

Funfetti Cookies

So I’ve made Ice Cream, I’ve made a milkshake, I think its about time to turn on the oven!!!

These cookies are the best ever. I’m serious. Even if they weren’t funfetti (that makes them super amazing because sprinkles.), they are still the best ever! You know why? They have a secret ingredient that makes them the softest, fluffiest most delicious cookies ever. You wanna know the secret???

Garbanzo Beans.

No! Please don’t leave!! They are so delicious!!! I got the idea from the Purple Bird Blog I made her cookies last year and fell in love. So soft and fluffy and amazing without normal cookie ingredients! (who wants to use normal stuff? Thats booorrriiinngg!!! haha)

So I decided to make funfetti cookies, using cashew butter for it’s sweet, buttery, frosting flavor, vanilla and almond extracts, and of course, SPRINKLES. Duh.

Secret Ingredient Funfetti Cookies

This is a small batch, meaning 9-10 cookies. You can easily double or triple the recipe!! I highly recommend it actually, so you can have some dough for eating;)

  • 1 C. cooked chickpeas, rinsed well
  • 2 T. cashew butter
  • 1 T. coconut flour
  • 1T. maple syrup
  • 1 tsp baking powder
  • 1 tsp vanilla extract
  • 1/4 tsp almond extract
  • 1/8 tsp salt
  • additional dry sweetener to taste (1-2 T. sugar, erythritol, 1/2-1 tsp stevia…)
  • 1-2 T. almond milk
  • SPRINKLES!!

Preheat oven to 375. In a food processor, blend everything (chickpeas through salt) together. Add almond milk, 1 Tablespoon at a time, until smooth (think hummus) but not too sticky:) adjust your sweetener to taste, add sprinkles and….

Bake for 13-15 minutes!! These get really puffy, so if you want them cookie shaped, flatten around the 10 minute mark 🙂

Now, let them cool….

LOOK AT THAT!! look at how soft and delicious it is!!! Dare I say…moist? (well do you have a better word? Succulent? ew. no.) It reminds me of those soft sugar cookies with the addictive pink frosting from the grocery store. No, the cookie part tastes better, but you know how soft those things are???

Cake Batter Milkshake

Confession: I had a milkshake for breakfast this morning. Ok I also had cake. Well, cake batter. Confused?

Did you forget it was birthday week already?? Of course I had cake batter for breakfast, I’m taking every chance I get!!

This recipe may seem like a lot of trouble for a smoothie  milkshake, which I get. Lots of ingredients yada yada. But it is soo good! And I mean, cake batter you can eat for breakfast and not get a stomach ache from?!? Count me in!!

Obviously, I started with bananas, because thats the base of like, every sweet smoothie ever amiright? Then oats for cakeiness, a date for buttery sweetness, extracts and baking powder for authenticity, coconut and cashew butter for creamy, buttery goodness…

And then things got a little strange (but good). It needed something…for buttery flavor and that raw, egg yolk-y flavor (forgive me vegan police, I said it needed yolk! oops…) So I added a bit of nutritional yeast and voila!! Cake batter!! I think yes.

I topped mine with more melted cashew butter, sprinkles, and cereal, but it would also be delicious with extra oats, fresh berries, banana, chocolate, frosting…ya know!! whatever your little birthday loving heart desires! 😉

Cake Batter Milkshake

  • 1 frozen banana
  • 1 C. almond milk
  • 1 date
  • 1/3 C oats
  • 1 T. coconut shreds
  • 1 T. cashew butter
  • 1/2 tsp nutritional yeast (optional)
  • 1 tsp vanilla extract
  • 1/4 tsp almond extract
  • 1/4 tsp baking powder
  • 1/2-1 tsp xanthan gum (depending on thickness you want)
  • ice cubes and/or water -for thick or thin
  • optional: add a few drops of butter extract!!
  • SPRINKLES!!!
  • toppings (ic more cashew butter, sprinkles, oats, fruit, cereal, etc.)

Put everything except sprinkles in a blender and blend until creamy. Pour into a glass or a bowl (I opted for milkshake soup 😉 ) and top with toppings, and enjoy!!

This was especially delicious when you got a bite of the melted cashew butter on top, it was like frosting 🙂 Yuummm…. (confession: I made a new batch of cashew butter specifically for this week)

Then I topped it with Vanilla Sunrise cereal (which tastes like cupcakes in my opinion). It was the end of the box so I got maximum crumblies :D. Unfortunately, Its not as pretty with the cereal, because I lost the sprinkles!!

Oh well. It was still delicious. Like replacing the milk in a bowl of cereal with cake batter. mmmm cake cereal 🙂

Birthday Week: Birthday Cake Ice Cream!

Its the beginning of Birthday Week!!! What is birthday week? Well, since my birthday is in 7 days, I decided to challenge myself to come up with a different, birthday themed recipe every day this week, all leading up to what I hope to be a cake that will knock your sprinkles off!!!

At first I thought, wouldn’t an entire week dedicated to my birthday come across as a little, well, self centered?

Then I thought, well, it is my blog, and it is my birthday, and since I am a princess…

I decided to do it anyway. Besides, who doesn’t love their birthday?

More importantly, who doesn’t like sprinkles?!?!

To kick off birthday week, I thought I would combine the two ultimate party desserts: Cake and Ice Cream, into one delicious, creamy treat!!

Birthday Cake Ice Cream!!!

Well, to be honest, its been sooo hot here lately, I didn’t really feel like baking. But the 102 degree days are supposed to give way to the low 90’s, so I think I’ll survive Birthday Week.

As long as I can eat this while I wait for the oven 😉

I based the recipe loosely off of my previous ice cream recipes, and then I added sprinkles..

lots of sprinkles;) Because life is so much better with them!!

Birthday Cake Ice Cream

  • 2 C. Cooked, peeled Japanese Sweet Potato
  • 2 T. Almond or Cashew butter
  • 2.5 C. almond milk (or nd milk of choice)
  • 2 T. Maple Syrup
  • 3 T. Vanilla extract
  • 1 tsp almond extract
  • 1/4 tsp butter extract
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 2 T. shredded coconut
  • 2 T. coconut flour
  • 1 T. xanthan gum
  • dash salt
  • sweetener of choice to taste (I used maybe 1-1 1/4 tsp stevia)
  • SPRINKLES!!!

Blend all ingredients very very well (like in a vitamix). Set in a container for a few hours or over night in the fridge to set and cool. When it’s ready, pour into your ice cream machine as per the instructions (I’m sure you could do this without a machine too, just freeze it and stir, freeze and stir). When it’s aaallllmmmost done, pour in your sprinkles. Seriously, don’t be shy with these ;). Once the sprinkles are all mixed in, scoop into a container and eat right away or freeze!!

WIAW-just desserts (well, almost)

Happy Wednesday! If, in fact, you are reading this on Wednesday, and if it happens to be 12:05 pacific time, that means I am 24 hours away from SUMMER!!! yessss….

So this week I just so happened to take a lot of photos of dessert. It happens sometimes. I ate other stuff too, but you know, not as pretty 😉

First and fore mostly, I want to congratulate my big sister on her college graduation!! I love her so much, and I couldn’t be more proud of her! She already has a job with the state too!

I was all caught up in the celebration and didn’t snap a photo of the food at the party, but (with the exception of the chicken) it was all vegan and delicious!

Normal food! We ate dinner at a place called Lettuce, which was like a build your own salad (think subway or coldstone), and they also had soup and quinoa salad (pasta, dessert, sandwiches, fresh bread, etc too) It was amazing. I do strongly believe they should become a chain!

A yummy portabella burger (i have to check every time I spell that) on the bbq! We also had grilled cabbage with an avocado balsamic dressing. Super yum.

Aaannnddd because I wanted to prove to you my watermelon addiction. See this bowl? This is a very large bowl. It was filled to the brim-overfilled actually-with an entire watermelon on monday afternoon. This is what it looked like Tuesday afternoon. 24 hours allbymyself. *i don’t have a problem 😉

Hot Chocolate… well, its supposed to be raw, but I killed it and made it hot chocolate 😉

This is very different, but good! Its a not too sweet, creamy cacao drink with warming spices and excellent stats! If you are looking for a traditional cocoa, just add a touch more sweetness and its awesome, otherwise its a good drink to get that chocolate craving without triggering that ineedmorechocolate button (you know what I’m talking about-the sweeter and richer the chocolate, the more you want ;). Very, sophisticated, tasting.
