WIAW: Random combinations -they happen

First of all…CONGRATS TO JENN!!!!! Yayyyyy a baby i love babies yayayayayayay!!!!!!!!

Okay, regaining composure…

So you see, my eats aren’t necessarily always conventional. Yes, I know Im vegan and this is blog world so that shouldn’t come as a shocker. I mean, when I first entered blog world I thought it was revolutionary to put nut butter on my oats, much less put them in a jar and now thats my favorite ever. But Im talking a little more extreme than that….like, lets-throw-random-things-together-and-see-how-it-turns-out foods. For example…

This meal happened on a night that I was feeling the sick bug coming on, and doing everything in my power to ward it off. I roasted a head of garlic and stuck a few cloves with chickpeas and nutritional yeast to make super garlic hummus, and sautéed some kale (superfood) with mushrooms (vitamins) and lotsa potatoes of both sweet and yukon variety. yumm

Followed by a cup of super antioxidant detox tea. Alas, my attempts were futile and a day home sick from school it was 😦

The best mushrooms I have ever eaten…from a steakhouse? okay…

Its just proof that yes, a vegan really can eat anywhere!! They had portobello mushroom on the menu, I asked them to put it on their salad in place of the meat, no creamy dressing and roasted potatoes (no butter) on the side. Then I doused everything in BBQ sauce, because that is a miracle of a condiment. Sooo yeah.

and here is what I mean about random meals aka leftover pasta salad ‘stir fried’ with quinoa, red onions, extra peas, spinach, and balsamic vinegar+Dijon mustard, notch, and black peppahhh 😉 weird but hit the spot haha!

Well this isn’t anything new, but I discovered a new favorite flavor combination!! Oats cooked with cinnamon, ginger, stevia, caramel and hazelnut extracts, and green apple. Its like a nutty caramel apple pie haha:)

Butternut squash ravioli with a homemade garlic basil pesto (cannellini beans, basil, garlic, nooch, lemon, salt, and zucchini) -Im getting quite good about making dinner for the family 🙂

And presentation! Here I made a lunch for my mother and I! I sauteed red onion and rainbow chard with some sweet pepper jelly and dijon mustard, on top of pinto beans and surrounded by golden beets and a sumo mandarin. It looked like sunshine 🙂

ps have you ever had a sumo mandarin? Its a mandarin orange thats the size of a regular orange/bigger and it only comes out in late February/early March and its my faaaaaavvvvvvooooriteeee orange ever:) So tasty!

Ugly but tasty soy yogurt bowl!!! Plain soy yogurt mixed with some cookies n cream plant fusion protein powder I won in Sarah‘s giveaway topped with graham cracker crumblies, banana, and cinnamon. Plus I added some koala krispies (organic cocoa krispies) and a few chocolate almonds post pic. Yeah this was good 🙂

Dessert pudding parfait!! Chocolate tofu pudding (the way I make it it tastes like frosting, Ill post a recipe one day 😉 ) layered with cereal and banana. This was delicious. I have nothing more to say.

Sometimes we make chocolate cake for no apparent reason but to have chocolate cake, and experiment with ingredients. I think I am officially a chocolate person. (but only good, dark chocolate -none of that cheap junk what a waste of cocoa powder!!)This was a GF, add your own sweetener devils food cake mix that we made with (are you ready?) brown sugar, xylitol, almond butter, PB2, mashed banana, flax eggs, shredded apple, and chocolate chips, topped with a chocolate-banana-sweet potato frosting (uuhhh what don’t I make out of sweet potato?). It came out like a banana bread brownie. Really good….

…But the frosting was my favorite part so I saved it for last 😉

Anndd now I’ve got to go write an argumentative essay on the effects of social media on society. Yay AP Language. Love you all!!!!!

On a separate note (and coming up in a future post) Yesterday was my 2-year Veganniversary!!! (and also one full year since beginning my recovery). Boy time travels quickly!!

Do you eat your favorite part first or save the best for last? Im a best-for-last girl myself, always and forever 🙂

Confessions

Soo I’ve noticed more and more bloggers putting up these ‘confessions’ posts. I like the idea, really because its a way to post the most random things ever with a more creative title than ‘here are a bunch of random facts about my life!!’. Besides, I know you’re really interested in weird facts about me 😉

Either I’m really injury prone, or I subconsciously reeeaalllyy like bandaids. In the past 2 weeks I have burned the side of my hand while reaching in the oven, cut my finger (instead of an apple), gotten a cut on my ankle from a pair of pants with zippers on the bottom, gotten a floor burn on my other ankle from doing the splits, and bruised my whole spine (and part of my shoulder) from a combination of yoga and doing somersaults in dance…

I’m not vegan when it comes to bugs. Pincher bugs, mosquitos, spiders…They do better not go near me (oops)

It looks like all I eat is oatmeal, salads, squash and sweet potato, but I pinky promise I eat other things too! They just aren’t as pretty to take pictures of! for example, tonight I ate a quick n easy mish mosh of black rice, black beans, and BBQ sauce. All mixed together in an ugly and delicious bowl 🙂

WIAW Eat Pretty

Whoop Whoop!!!! Its WIAW Time!!!!And its almost Valentines Day too!!(double yay!)Speaking of I went to a vegan Valentine’s cookie exchange the other night554160_539053652784293_423973140_n(typical vegans eating salads haha)And I came home with THIS:

69271_539051752784483_1609557508_nI decided to challenge myself and designate a variety of cookies for myself to actually eat and I’ve been keeping up with that challenge and it is delicious! I can’t even remember the last time I ate a real cookie (homemade without trying to be healthy) sans anxiety but man have I missed it!!But cookies aren’t the only thing I’ve been eating…photo-17photo-15My love affair with oatmeal and melty nut butter continues…photo-14And it celebrates Mardi Gras! Blue(purple)berry, green pear and (yellow) lemon oatmeal topped with cashew butter and SPRINKLES!!!! Seriously why don’t I put sprinkles on my oats more often? They make me so happy!! So many colors!!You know what this made me realize? I am a sucker for presentation. Really,I love to eat pretty!!photo-13Pretty and colorful!! We recreated our favorite Dos Coyotes salad! A warm, Trader Joes brown rice tortilla topped with Amy’s vegetarian refried beans, a multitude of rainbow-y veggies, and lots of salsa (added post pic)photo-18Feeling the mexican this week, as my mother made us veggie fajitas for lunch the other day! Soo tasty!IMG_1477While not every meal is exactly pretty, they are always very tasty!! Here we have the finished product of Leanne’s Creamy Broccoli and Chick’un Casserole. OMG MAKE THIS NOW. She has magical powers, I swear. Not only was this incredible, but her pictures came out gorgeous! There were no leftovers, and rest assured this will be making repeat appearances.IMG_1450Other times I make sure my meals are pretty for the picture, because they sure as heck won’t be afterwards! Case in point: Lovely BBQ Chile/stew on top of quinoa and steamed kale. Pretty right? Well, afterwards I dumped so much nutritional yeast on it, it looked like a bowlful of (delicious) yellow.IMG_1482And to finish off the night: Soy yogurt with cinnamon and cocoa powder stirred in, topped with banana and PB Toast Crunch. It was popping up everywhere, and I just had to try it myself. I am all about whole foods, less processed, ya know. But YOU GUYS!!! This tastes peanut butter  Girl Scout cookies. Artisana Review (and giveaway!!)

So a few weeks ago I contacted Artisana and asked to do a review of their nut butters, they happily obliged:)

And then a week later I got a second package in the mail (double happy dance!)

(the second package didn’t have the cacao butter, I just threw that in the picture haha)

In all, I was sent samples of their five superfood nut butters, raw coconut butter, raw cacao butter, raw cashew butter, and raw pecan butter. Let the tastings begin!!

First of all, I tried their Coconut butter on top of a tropical green smoothie.

It had a wonderful coconutty flavor, but alas, I was not a fan (I like coconut as an accent, not a dominant flavor. I know-I’m weird) Of course, so many others have tried, and loved, coconut butter so don’t take my word for it haha!!

Next I tried their Cashew butter. Seeing as I had just discovered my love for cashew butter when I made my own, I was incredibly excited for this.

On top of lemon blueberry apple oatmeal. The verdict? OMG AMAZING!!! It was so sweet and creamy, like frosting on top of my breakfast!!! Probably my favorite of all the nut butters I was sent, and blew my homemade cashew butter out of the water!!

Thirdly I tried the pecan butter on top of cranberry apple oats.

This was seriously like eating pecan pie in butter form. Sweet, creamy, and well, pecan-y (I’m not sure how else to describe it!!). Sooo good!!! I kept ummming and ahhhing at the breakfast table so much I made my stepdad jealous (pecans are his favorite) so I guess we just have to buy some more for him (I wasn’t about to share!!!)

The cacao bliss was next on my list! I’ll admit, I was a little nervous to try it, seeing as I wasn’t a fan of the coconut butter, but this was delicious!! A mixture of coconut butter, cacao, cacao butter, and a bit of agave -it tasted like a mounds bar when it was cold and hot fudge when I warmed it a little to mix it up.

I put it on top of vanilla soy yogurt and sliced bananas, and later topped it with a bit of crumbled graham cracker (none of this is raw, oops!!) and it was seriously like eating a s’mores sundae. And with only 4 grams of sugar too!!

Now it was time to get down to business and taste these superfood nut butters. With ingredients like blue algae, marine phytoplankton, and milk thistle, I was a little skeptical. But I just went for it.

I decided to group them according to flavors, vanilla-y and fruity (I’m so technical haha)

On top of vanilla cinnamon blueberry oats, I tried:

Goji & Milk Thistle (Orange) –Raw organic cashew butter, raw organic almond oil, raw organic goji berry powder, raw organic agave, raw organic milk thistle, raw organic vanilla powder.

This was my favorite of the three, it was sweet and vanilla-y. A little odd but I kinda liked it

Berry AntiOxidant (light purple) –Raw organic cashew butter, raw organic almond oil, raw organic goji berry powder, raw organic elderberry powder, raw organic elderberry powder, raw organic agave and raw organic stevia

My second favorite, fruity and mellow.

Acai Berry (dark purple)– Raw organic cashew butter, raw organic almond oil, raw organic acai powder, raw organic elderberry powder, raw organic agave, raw organic vanilla powder, raw organic stevia and seasalt

I’ll be honest, I didn’t like this one. The addition of the seasalt made it too salty, and overpowered the other flavors. A sweet and salty thing was going on that somehow made it oddly tangy.

These nut butters were different, they didn’t taste like nut butter but I’m not sure how to exactly describe them!! Were they interesting to try? Yes. Would I buy them myself? Probably not

Next I tried the Blue Algae and Phytoplankton butters on top of lemon blueberry oats

Blue Algae (dark blue-green)-Raw organic cashew butter, raw organic almond oil, raw blue algae, raw organic agave and organic lemon oil

This one I actually really liked!! It tasted kind of like fruit loops, and it was definitely my favorite of the superfood nut butters! I would probably buy this one 🙂

Marine Phytoplankton (bright green)-Raw organic cashew butter, raw organic almond oil, raw phytoplankton, organic lemon oil, raw organic stevia and sea salt

This one was still good, but I liked the blue algae better. This had a milder fruity flavor but was saltier, which I think overpowered the fruity a little.

WIAW: A day in the life (almost…)

Hi guys!! You know, I just realized that I rarely ever do an actual days of eats, I just kinda do a bunch of random photos I took throughout the week. SO-how about a real WIAW (slash monday kinda…)

A bowl of fruity oatmeal (mixed frozen berries plus extra blueberries and lemon stevia) with flax and a ginormous scoop of cashew butter (I make it myself and its half the cost of store bought). I love when it melts all over the oats like icing -but I save it for last anyway haha!

Okay well this was actually Saturday’s lunch, but the same basic idea haha! Salad with avocado, veggies, kabocha squash, chickpeas, cranberries and honey mustard -just switch out the squash for rice and stick it in tupperware and its mondays lunch! Still obsessed with the cranberry/mustard combo -sue me 😉

I had an appointment after school, so I grabbed a snack to go. An apple and ‘trail mix’ -two different cinnamon cereals (cinnamon cheerios taste like churros) plus chocolate almonds. Best ever.

Ok ok. This was Sunday night’s dinner because what I made on Monday was ugly (but tasty. BBQ Tempeh, portobello, and brussels sprouts stir fry 🙂 ) Baked sweet potato topped with onion/black bean/ corn mixture, salsa, and lots of guac! Side of brussels sprouts and cheater kale chips (if you use dino kale you don’t even have to piece it apart!)

Also I don’t have a picture of my night time snack that night so how about a pretty picture of chocolate gingerbread cake and sliced apple? I mean, I almost always have some form of fruit + chocolate at night anyway (Unless its a soy yogurt bowl -i go more fruity) sooo basically its all the same yeah?

Every time I eat OIAJ I secretly think, “my breakfast is cooler than all the other breakfasts!” Anyone else? I had some this morning too…my stepdad and I go through nut butter like it’s our job, and I get all the jars 😉

Culture clash dinner: Black bean chili on top of soba noodles. We called it mexican spaghetti. And then ate it with chopsticks.

Sticky Orange Tempeh (<this is awesome. It was a little salty so I doubled the OJ and added a drop of orange stevia) on top of shredded dijon b’sprouts and kabocha.

And to end the post- cake and (trader joes soy) ice cream from my mommy’s birthday.

I’ve been challenging myself, adding in more fats, and just trying not to focus on whether a food is necessarily always healthy. Cheerios aren’t organic, and ice cream isn’t sugar free, but it all balances out. Isn’t that what really counts?

Random thoughts and updates (plus overcoming fear foods)

So I was sitting here, on a lovely Sunday morning without a clue what to do. A post! I’ll write a post!! But on what?

How about updates, random thoughts, silly anecdotes, and 1032142353  a few pictures…just because it’s been awhile 🙂

First of all, thank you for all of your kind comments on my last post. It was very rough the first couple of days, but I can honestly say now that things are really looking up. I’m not going to the gym and I’m okay with that. Actually, not exercising everyday has made me feel more comfortable, and less anxious. Imagine that!! Plus, I’m not fearing the fats (well, not as much. I’m doing a lot better!)

This is where I explain to you guys that I am officially eating nut butter on a regular, friendly basis. And a lot of it. Like, no joke I just scoop it onto my oats, without a single thought of anxiety.

All kinds too! I’m branching out, challenging myself. See that right there? That is cashew butter (ding ding ding MAJOR fear food). I made it myself and ate the whole batch in one school week. It was delicious. I made more yesterday, a whole jars worth!

I took a bag of Trader Joe’s Raw Cashews and put them in my food processor for a really long time. Then, just when it looked like delicious cashew butter, I decided to keep processing it. Probably for double the time needed, but I now have insanely smooth, drippy, creamy, raw cashew butter that only cost about $7 for a full 16 oz jar (instead of $11-$15 for an 8 oz jar).

Now that I am obsessed with nut butter, and okay with that, and enjoy making my own, I decided to do some research. AKA I looked up all of the companies that make flavored nut butters I want to try, and took a picture of the ingredients list so I can make my own! (muahaha!). Also, I thought the heart cakes were a cute idea…Expect some recipes comin up real quick!!!

 

On the note of recipes…I was flipping through the paper this morning and I noticed that Little Debbie now has what I’m calling “Twinkie Rights”. I thought this was hilarious for some reason, and my stepdad started saying how much he loved Little Debbie’s oatmeal cream pies. He had hoped they were vegan, (like Oreos) but I looked it up and they weren’t, so I said I’d make him (but not healthy lol). Anywho, as I was searching for a vegan recipe, my mom asked if the originals were vegan. Our conversation went like this:

“Are they vegan?”

“No. Eggs, egg powder, milk, milk powder…”

“I don’t understand why they use all of that when there are so many chemicals they can use instead!”

hahaha! Not that we eat chemicals or think it’s healthy, but just that we were surprised Oreos were vegan. And they are, since they use so many fake things instead of eggs and butter…. This kind of came out awkwardly…Moving on…

I’ve told you about my “OIAJ cheating” before right? Well here is an example. I have trained my stepdad to leave me the almost empty jars for nut butter, but I still have to hide the jar when it is at optimum OIAJ readiness. Otherwise there is not enough left (see top left). In this case, I have to just add more nut butter and then I can go about my business 🙂

Fun Fact!!! I ALWAYS eat my salads from the bottom up. Meaning, I eat all the lettuce first, and then I eat the toppings. I don’t do this consciously either, but I think it started as an attempt to not eat the toppings and dressings just to be left with dry lettuce. Haha, I do it with my oatmeal too, I save all the melty nut butter for last, even though its on top 🙂 (ps this salad had half an avocado on it. Maybe it doesn’t seem like a  huge deal, or a lot, but this was a huge step for me. I have always either skipped it, or stuck to a strict serving size of 1/4 avocado at a time. So half of one in one sitting, without any anxiety, was awesome!)

In a break from all of the food pics, do you like the hat my friend made me as a late Christmas present? It’s kind of an inside joke, but basically I have a love for all things girly and glittery, and we have conversations about saving the world and having pet unicorns soooo…..yeah 🙂

Yet another example of relaxing and allowing. This is the portobello veggie fajita plate from Chevy’s, something I have previously shared and had anxiety about (too much oil! too much salt! ahhhh!!). It came with warm corn tortillas too. Well, I am pleased to say that I ate every bite of this -including the guac, tortillas and mexican rice, plus some tortilla chips with even more guac (tortilla chips >fear food). It was very good. Was it more salt and oil than I am used to? Yes. Was I a little uncomfortable? Yes.  I have a good time? Of course! Did I wake up the next morning and still a full breakfast with lots of peanut butter? You bet!!

So thats where I am at. Feeling better, happier, more upbeat. Enjoying life and crazy hats. Branching out, more comfortable. I can’t wait to see where I am in the future 🙂
