- 1 can black beans, drained and rinsed
- 1 C. leftover vegan overnight oats (with chia seeds)
- 2 T. almond butter
- 1/4 C. coconut flour
- 1/3 C. cocoa powder
- 3 T. carob powder
- 3 T. organic sugar
- 3 T. organic brown sugar
- 1 tsp cinnamon
- 2 tsp instant espresso powder
- 1 1/2 tsp baking powder
- 1 tsp balsamic vinegar
- chocolate chips
Lightly spray an 8×8 pan, and pre-heat oven to 350. In a food processor, put all ingredients (except for choc. chips) in and blend well. Once smooth, pulse in some chocolate chips (your preference), then spread batter into pan. Sprinkle with a few more chocolate chips, then bake for 20-30 minutes.
You no longer have an excuse not to make brownies just because its 10 pm and you are out of your usual ingredients. Its called creativity.
